got any suggestions for a chicken dish for an open house party??

Howdy Chowhounds!! Overall my party was a success. I had too much food, lol, made worse by the size of the roast beef we picked up from A&S. It was delicious but way too much. The Chicken was tasty, I did make too much of this too and probably would have used thinner breasts but the flavors were yummy and very pretty presentation with the black olives, apricots and the capers.

The little potatoes were such a success..wow..just boiled baby red potatoes with a scoop taken out and seasoned sour cream piped in, then i alternated chives, crumbled bacon or caviar for topping. I also made a blue cheese/cream cheese topped endive pieces with a smoked chipotle chili roasted pecan crumble..that also got rave reviews. Believe it or not the big frozen cleaned and cooked shrimp from BJ'S were delicious and impressive, many people thought I did all the work myself preparing the shrimp, I DID make the cocktail sauce from scratch, but all I did was slowly defrost the shrimp and arrange it pretty. Also I made a simple short skewer with grape tomato, small mozzarella ball, piece of fresh basil and some got a pitted calamata olive. Thanks to you all for your guidance and your patience.

New to Fairfield, CT from Manhattan - your favorite restaurants?

I have learned in life you usually can't go back..lol...its never the same. I am not a fan of sicilian pizza anymore, I eat less bread now that I am older. Its nice that the family has resurrected the business. They are really pushing this new Colony ..front page of the CTPost and a feature on News12. I wish them luck. I read that Fitzie retired 4 years ago.

I am a transplanted New Yorker here in Fairfield County..and for years I felt there was NO good pizza..back in the day when I was a teen/college girl I enjoyed Arcudis sicilian ( the mid 70's early 80"s). During that time we also loved our occasional Colony Grill ( jimmy bo-bos!!), we dont get there too often but maybe once a year we go for a splurge. Does Fitzy still wear tons of cologne? Currently I like Luigi's on Post Road ( near Apizza Centre). The pizza is great and we always get the brocolli rabe appetizer too. When Colony gets here I will probably get an occasional pizza there but it wont be my "go to" pizza place. Now that I found all of you Chowhounds I will read your reviews with care and maybe branch out and try a few new places. But my hubby and I agree on Luigis so its a nice comfie place to go.

Las Vetas barely had room, they are moving into the old "Where in the World" storefront next to the community theatre. Colony would work in the Fairfield Staitionary space, but there are a few pizza places in that little area already, albeit not very good ones..mike's and pizza works are right there...then a dominoes, nauti dolphin and avelinnos close by. I did a search to see what else is there and actually there is a phone listing already for colony @ 1520 post road..so whether you love it or hate it it's coming!!!

got any suggestions for a chicken dish for an open house party??

AHHHH I made the commitment and right now there is a TON of chicken marinating in my fridge. This smells so good I can't stand it!! If it tastes even half as good as it smells I am going to be one happy hostess tomorrow!! I went with the apricots instead of the prunes, and black pitted calamata olives. OH this looks great. Tomorrow when I cook it I will most likely cut back a bit on the brown sugar, that seems to be a running suggestions throughout CH and other recipes on the web. I will let you know how it all goes. Thanks again for helping, I am so glad I found this website, you are all so awesome. I'll post my results..wish me luck!!

This sounds so good..I decided on the Marbella but I am going to keep this one close. I have rebelled the last few years when the crowds arrive here for Super Bowl Sunday. No huge sandwiches, orange wings and fried gunk.
Thanks for being so kind and taking the time to post this for me.

All of you have been so nice. Thanks so much.

got any suggestions for a chicken dish for an open house party??

Ok, some recipes mention serving the remaining pan juices in a separate bowl...have you done that? or do you serve the whole thing wet and juicy in the chafing dish and let people serve with slotted spoon...I think I will take out 1/2 the dried plums (lol) and add apricots..sounds like it would be pretty. I am still thinking about some of my guests sitting on couches eating their food. One blogger suggests that the thighs would be so soft it would easily come off the bone, but if i do the bonelss breast am I doing more of a strip or a cube.. I know I can get either in bulk pkg at BJ's. There is a mediterranean curry couscous from Near East that I've made before I wonder if that would pair well or stay with something more basic so the juices from the chicken do the work. I think I just asnswered my own question there..hahahaha.

got any suggestions for a chicken dish for an open house party??

ok i am reading alot about chicken marbella and i think i may take the plunge. Some people suggest couscous, some noodles. I have 2 4qt chafing dishes, 2 1.8 qt ceramic chafing dishes and another big one with rectagular sections ..so my menu has a lot of easy munchie things..roast beef and tons of shrimp so i am thinking the chicken will be something people make a special trip to get and eat during the evening. How would you suggest I cook and serve the couscous or noodles? How do I keep them moist? I like the idea of making the CM the day before and then reheating for the party, but unsure what to do with the starch. I dont want to be boiIing stuff when my guest arrive. I am still deciding btwn making the CM with the thighs or the breasts. Would you suggest bowls so people can put the starch and chicken together? Please forgive my nervousness, I am not usually shy. This Christmas I took a huge plunge and served Guy Fieri's brussel sprouts (http://www.foodnetwork.com/recipes/gu...) as a side with filet mignon for my Italian in laws. I had never had them they just looked great on his show.( I would give them a 7/10 needed to cook sprouts longer to soften a bit more). I am very nervous about making something I have never cooked for this group of friends so that is why I am sweating these details. I appreciate all of you and your kind encouragement!!

Best and Worst Recipes You Made From a Cooking Show

Hi!! Right now our favorite go to and EASY meal is Jacques Pepin"s Ragout of Broccolini, Beans, and Sausage with clams. It's from Jacque's series "More Fast Food My Way". My husband and I watched the episode one Sunday afternoon on PBS..and when it was over I put on my coat and went out to get the ingredients. Now I keep the beans and clams in the pantry and some sausage in the freezer. When I see broccolini or I am in the mood for a yummy warm one bowl meal I turn to Jacques!! The recipe they have on
his website leaves out the clams!! But clearly in the episode he adds them. This is the link to the episode and the recipe w/o the clams.
http://www.kqed.org/w/morefastfoodmyway/episode209.html

Probably delish w/o as well but here is a modified recipe from another foodie adding back the clams I found online:
http://dailyfillblog.com/blog/ragout-...

I have been using the Goya Great Northern Beans instead of the Goya cannellini beans, dunno what the difference is in the type of bean but the Northerns are a little smaller and work great. I have used both w/ success. Don't forget some good crusty bread. Mmmmmm

got any suggestions for a chicken dish for an open house party??

Hello you wonderful chowhounds....I have been lurking and reading and reading..this is a great site. Thank you all for being so generous with your ideas and expertise.

That being said I am having a dinner/open house/cocktail party for 25 this coming weekend. I am stumped as to what to serve for a chicken dish..needs to be easy to eat if the plate is in your lap on a couch, or standing up...AND something that can be warm and/or room temp so things can be left out for awhile. Got any ideas? recipes? places for me to order something from??

Help!! Cocktail Party/Open House next weekend Westport CT

thank you for your encouragement and your suggestions...i have been sitting on this website for the entire day and have decided on making a few appetizers that i found:

1).little new potatoes boiled, a little bit scooped out and then stuffed with seasoned sour cream and then alternately sprinkled with chives, bacon and/or caviar.
2). a warm garlicky artichoke dip that other chowhounds love so much its sounds like they would like to marry it!!
3) endive boats stuffed with a cream cheese/blue cheese filling, with chopped sugar chili pecans and baby red grapes to garnish
4). tomato/mozzarella sticks with fresh basil leaves and an olive on each

then i also plan a huge platter of clean and peeled shrimp with a yummy cocktail sauce
a cold filet mignon platter with bread and great sauces ie: horseradish along with tasty rolls

i want to do something chicken but i am stumped..i am going to order the filet mignon platter locally..and so far plan to create everything else myself..but the chicken is still stumping me..any ideas? i am not opposed to ordering something chicken i am just not sure what would go with what i have so far

I will also have fresh fruit and crudités, does anyone have any other ideas?

Help!! Cocktail Party/Open House next weekend Westport CT

HAHAHAHA it looks like it..I really was asking which people preferred or have had good experience with. What kind of meat would people suggest? And what kind of sides would you suggest? I dont know why I am gripping about this..I just did filet mignon for the same amount of people for a sit down Christmas dinner, but for a party where people are milling about I am suddenly stumped. Thanks for any and all replies!!

Help!! Cocktail Party/Open House next weekend Westport CT

HELP!! I am planning an open house/ Cocktail/ dinner party for 24 friends next weekend and I am panicking about food. I want to order some meat- something that can be self-served by my guests. Don't want just the traditional spiral ham..want something like a pork loin or a roast beef..want to order locally- what do you suggest? Balducci's is a tad $$$, what about A&S, or the Pantry in Fairfield? Stew Leonards? I want it to be yummy and easy to serve and not to worry if its not hot as the evening progresses. Any suggestions for other dishes? I would also love some awesome hors d'oerves ..any tips? Trader Joe's?

Also is it alright to have disposable plates and high quality plastic utensils?

Thanks!!

a place to have a party in fairfield county connecticut?

My friend is looking for a place to have a nice 50th birthday party in the Norwalk/Westport/Fairfield area, for about 40-50 guests. Nothing very high end. Someplace with a nice space for a party, probably no dancing. Can anyone come up with some suggestions? It would be in February so they need to get on it pretty quick. All I can think of are places a bit further out.

Thanks!!
