I go with the cut one way. And I also peel the bottom two to three inches with a vegatable peeler that way you know that they will not be woody and tough.

Warm Beer's No Fun

We go camping every August in Maine. We now have three of the Coleman Xtreme coolers. They work very well if you read what to do and how to pack them. We chill them down the night before with ice blocks that we made ahead of time from milk cartons. Then make sure the next day when we pack them that everythink that we put in them is frozen or cold before we put it in the cooler. We put in both block ice and cubes. The bolcks last longer and the cubes fill most the voids. I drain off any water in the morning. My trick is to keep them up on milk crates to make draining easy and you don't have to bend over to get what you need out of them. last year it was in the high 80's or low 90's during the day. we only needed to go out and get ice one time to re fill the coolers they work GREAT in fact I was just looking at a new one to buy just to keep my beer in when camping or for out one the front porch.

Peanut Sauce

The recipe is a good starting point. You can play around with it by adding or deleating. I added toasted balck and white sesame seeds and sliced green onion tops for more contrast and texture. Some times I add hot sauce or minced ginger and I always use fish sauce insted of soy.

Hamburgers and Sausages from Scratch

I make all of my own sausages at home. We even grow most of the herbs that we use in them. Yes it takes time But what you get in the end is many times better then what you find in stores. We use the Kitchen Aid stand mixer with the grinder and stuffer it works fine. We always make it with two people one for filling the grinder and the second for holding the casings and making sure they are filled right with no air pockets in them. The trick is to have the mixer running at a medium speed. Get yourself a book on sausage making for recipes or look on-line we started out buying mixes for sausage making from American Spice.com. Tastes great and when you toss your own home made sausage on the grill you know what is going in your mouth. Insted of the first and last parts over the fence!

Beer to Wrestle With

I brew my own beers and have made a few of the high ABV ones my self. It takes time and a lot of know how. And in the end you end up with a much better glass of brew in your hand. Yes the price is a little higher for the store bought brews and they are worth it when you find a real good one or more. I enjoy the thrill of the hunt myself and will always be looking and hunting.

Green Beans with Smoked Bacon

Made it last weekend for Sunday dinner. It was better then just steamed green beans. We liked the bacon and onions in it and the vinegar was just what I think it needed. Will make it again for sure!
