i save veggie trimmings in the freezer, as well -- onion, ginger and carrot ends, along with fennel tops and fronds.

when i have a couple of pounds of bones and a bagful of veggies, i pick up a package of chicken feet and place them along with the the bones in a roasting pan, cover with cold water and let simmer in a 250-300-degree oven for 3-4 hours, then add the veggies and simmer for another hour or 2. cool and strain.

from what i recall (and it's been a while), the PF frosting was not nearly as fudgey as the SL. also, the PF was a layer cake, suitable for serving to guests. the was a single layer in an aluminum pan, perfect for the occasional single-sitting indulgence.

store fresh ginger in freezer, then grate on microplane -- no peeling required.

use a pastry blender (with steel blades, not wires) to chop hard boiled eggs and to make mashed potatoes for one.

even off, my gas oven is often enough to melt several ounces of finely chopped chocolate without burning.

i save onion and fennel trimmings in a freezer bag to use to stock.

have a groupon for vinny's in somerville that expires on wednesday. had hoped to use it earlier, but life intervened.

anyway, sunday hours weren't listed on their website (which is often down due to insufficient bandwidth, but that's another story). so i call and am told they're open 3-10 on sundays. we get there at 7:40 and are told there's is an hour wait, then the guy disappears into the dining room before we can ask if we can join the people already eating at the bar.

another couple arrives. since there's no one to greet them, we tell them it's an hour wait. after 10-15 minutes, the first guy returns and we ask about eating at the bar. he tells us no, they're shorthanded, and oh yeah, they close at 8pm, which is to say, 5 minutes. i tell him i was told 10pm. he asks who told me that. i said, "whoever answered the phone we i called a few days ago."

so, no osso bucco, and i'm going to lose all but the face value of my groupon since getting there before 5/2 is impossible.

any suggestions?

when the native strawberries are available here in massachusetts (a few glorious weeks in late june/early july often cut short by torrential rains), my favorite treat is to top the berries with some artisan ricotta flavored with a little vanilla, and sprinkle with chopped toasted hazelnuts and shaved bittersweet chocolate.

yup -- stouffer's mac and cheese is still the gold standard. hard to believe after all these years -- decades! -- no one has come close to cracking that recipe.

The perfect soup to serve with buttermilk biscuits?

continuing the sweet potato theme:

roasted sweet potato soup

1 large sweet potato (about 1 pound)
1 large yellow onion
1 large granny smith apple
1/2 bulb fennel
2-3 cloves garlic, peeled
2 tablespoons olive oil
salt, pepper
1 quart chicken or vegetable stock

preheat oven to 450-degrees

peel sweet potato, onion, apple (core apple) and cut into large chunks. place on baking sheet along with garlic cloves and toss with olive oil, salt and pepper.

roast for 20-30 minutes until vegetables start to caramelize. transfer roasted vegetables to 3-quart sauce pan, add stock and simmer for 20 minutes.

let cool and puree. i prefer an immersion blender. but a blender and food processor also work. check for seasoning and serve. freezes beautifully. also good with light coconut milk and some fresh ginger grated in.

makes 7 cups.

if you'll have access to a kitchen, you could bring rolls of this chocolate shortbread dough, then cut and bake.

chocolate shortbread

4 ounces (1 stick) unsalted butter, room temperature
1/3 cup dark brown sugar
1 ounce unsweetened chocolate, melted and cooled
2 teaspoons vanilla
1 tablespoon espresso powder
1 cup flour
1/3 cup cocoa
pinch salt

Mix dry ingredients together and set aside. Cream butter, add sugar and mix until light and fluffy. Add vanilla and melted chocolate. Add flour mixture and mix until smooth. Form into a log. Wrap and refrigerate or freeze. Cut into ¼-inch slices, place on parchment-lined cookie sheet and bake in pre-heated 350-degree oven for 7 minutes. Cool and store in air-tight container.

the revised basic recipe: 1 pound broccoli crowns trimmed and cut into stalks. 1 teaspoon red wine vinegar, 3/4 teaspoon salt, 1/4 oil, 3 cloves garlic minced, pinch crush red pepper flakes (to taste).

variation 1: 1 teaspoon fennel seeds crushed, heated with oil, garlic and red pepper flakes

variation 2: substitute cider or orange muscat vinegar. after pouring oil over broccoli, grate fresh ginger.

variation 3: substitute lemon juice for vinegar. after pouring oil over broccoli, grate lemon zest.
