Propane oven help??!!!

Probably should call a repairman then. I've had a propane range for 15 years or so. You can see the flames if you look but they should not be high "blazing" flames.

If you think it looks wrong you should have it checked out. Maybe nothing, maybe will blow you to kingdom come if you ignore it.

I will say that I have never had a propane range with a pilot light so I may be completely wrong on the whole deal.

That is kind of how a gas oven works. How high were the flames? Did they come up above the floor of the oven?

I have a friend who claims to be a vegetarian. She knows that she is not really a vegetarian, she just finds it easier to say vegetarian than explain to people that she doesn't like to eat the flesh of fish, fowl or beast.

She will eat a soup or sauce that has meat broth in it. I don't have a problem with it.

Pulled Pork using the paddle KA attachment?

The beauty of pulling it by hand is that you will encounter bits and pieces that you are unsure whether to put in the good pile or the bad pile. Those bits go directly in your mouth.

As someone else mentioned, I don't really care for long shreds and prefer to cut the big pieces down across the grain with a knife.

I agree that flatware, plates and glasses affect the enjoyment of food. Interesting how in depth this article is. Would not have thought the utensil would influence the perceived saltiness of something.

A fairly new to us restaurant has quite odd, to me, flatware. It is about 1/2 to 3/4ths normal size depending on the piece.

Technical issue on tipping

What I was hoping for is an explanation of how the receipts are processed at the end of the night.

I assume that when they run your cc that you are then going to be charged for the price of the meal whether you leave a tip or sign the slip or not.

It seems like it would be a huge time sink to check every bill for mathematical accuracy. I can certainly see going through a stack of them and either inputing the total line or the tip line.

I should have said in the OP that an emphasis on fresh gulf seafood combined with the cuisine is a huge plus.

I have been by there dozens of times. I've never personally seen a line "several blocks long". Not saying it hasn't happened but not when we were in the area, usually more like 50-100 people at lunch time.

Also, the whole area looks deserted, it is usually crowded with cars and sightseers whether they are waiting in line or not.

Hamburgers for one?

I would much prefer to refreeze the meat than reheat the burgers later. They will cook up just fine putting them in the pan frozen also. Make them into patties, individually wrap and put in the freezer.

Inconsistent flavor of grass fed beef

I remember us taking an old herd bull to be slaughtered, maybe 8-9 years old. A bunch of yearling hoodlums got him cornered and broke a hind leg fighting him. Dad got the whole animal made into hamburger so we ate a lot of burgers and meatloaf over the next few months.

Looking back I sure wish he had at least got the filet taken out. Bull weighed at least 1,800 pounds, would have been impressive steaks. Don't remember us making any particular comment on the burger. A simpler time, we ate what we raised for the most part.

Technical issue on tipping

It seems that in my case it would be clear that I meant to leave a $25 tip.

They might assume that I couldn't do simple arithmetic and they would have no reason to know that I'm a retired accountant.

I do feel like if the waiter was consulted he might point out that I was having trouble seeing (he offered to go find me a pair of glasses or hold the menu another foot or two away for me) and that I also drank a full bottle of wine less the tablespoon my wife had.

I can see how if you were running a restaurant this kind of thing would be a pita and I really need to do better about my glasses.

For the record, had discovered that I shorted the waiter, I would have called and made it right.

Technical issue on tipping

We went out to dinner last night and as I'm prone to do I forgot my glasses. My wife left the table about the time the check arrived and I squinted and peered and did my best. I thought the check was for $118, left a $25 dollar tip and totaled it to $143. I noticed my copy this morning and the total was actually $110.

So, will they correct my error and take a $25 tip or take my total amount?

I'm not in the least sweating the $8, just curious if there is some kind of "rule" regarding what is done when customer's inevitably make an error on the tab.

Pork loin and tenderloin is about the only thing I use a thermometer for. It goes from too rare (for me) to overcooked very quickly.

Help me scale up Marcella Hazan's Classic Bolognese (Ragu) Recipe

I would multiply all my ingredients by however many times I wanted to increase the recipe by. Understanding that the greater quantity would change the size of my pans/heat/times etc.

My point about the tablespoons is that if you had coarsely chopped onion and measured it out with two scoops of a tablespoon it might be different than if you doubled it (a quarter cup) and measured in a 1/4 cup measure.

Help me scale up Marcella Hazan's Classic Bolognese (Ragu) Recipe

The things that come to my mind are; you made an arithmetic mistake when you scaled it up or if you converted from tablespoons to cups you made a mistake there. Chopped onion is not something I think of measuring by the tablespoon...

The other thing is that pot you used to cook the larger batch maybe did not work as well for browning or reducing the sauce.

If you were more specific about what "went wrong" people could make more intelligent suggestions/speculation.

Old Cows for meat

I see. I've never knowingly eaten a dairy breed cow. They might very well be delicious but there will be a much lower ratio of meat to bone and hide so you would need to factor that in when considering cost.
