Really Super Amazing Broccoli recipe

Two ways I like to make it:

1. Light - boil briefly until just cooked but still firm, drain and rinse with cold water for a few seconds. Toss with EVOO, salt, pepper, and a little fresh squeezed lemon.

2. Heavy - make a delicious homemade hollandaise and positively drown the broccoli.

Bonus - deep fried broccoli is fantastic! Use the same recipe as for this cauliflower:

Best ways to cook/use Eggplant

Not all Chinese preparations of eggplant use the peppercorns - my mother in law is Taiwanese and she was adamant not to use them... (shrug) everyone's got their own version.

My favorite thing, by far, with eggplant is stir-fried eggplant with ground pork and chili peppers... so good! I'll have to post a recipe to my blog soon.

Regarding pork fat: rendering, storage, and usage.

Man, nothing is better than frying small pieces of pork fat in a pan. They render and then you can tilt the pan to fry in their own oil... resulting in crisp little puffs of goodness!

I have a ton... northern Virginia is full of them! Great for ingredients and stuff but the actual tableware is lacking. The markets are mostly Korean with one or two Chinese markets around. I'll take a look at a few but I have my doubts... :) There is one small Japanese market called Maruichi in Maryland, but I haven't had the chance to check it out yet.

I can't find the name of this anywhere, and so it's very hard to find for sale, either. It holds the meat up off the plate so that it stays crispy.

I want to buy a set, because I'm cooking tonkatsu so much. It's always served this way in Japan. Anyone know the Japanese characters for this or have a link? I found them once on Amazon Japan, but I forget how... now I can't find it again.

Thanks, clearly there are just many takes on what a good smoothie is and how healthy it can or should be. I like all kinds. I have found that water, a little orange juice, 5 big spoonfuls of vanilla lowfat yogurt (not frozen), frozen strawberries, and fresh berries, along with a scoop of ice cubes, is very good.

What "strawberry juice" for smoothies?

I get it, but the one I like at the mall uses both fresh fruit and "juice' - so I think it's fine as a treat. I'm not trying to make the world's healthiest smoothie, just one that tastes the best.

I've tried a few in the BlendTec so far, and basically I am finding that if you don't have some liquid in the base, it won't really blend. I had to add water or milk to get it to blend using frozen strawberries, fresh strawberries, ice, etc.

I saw that, too... but wasn't sure if there was something commonly used in smoothies. It looks like there is a product made for mostly alcoholic drinks - I wonder if that is the stuff.

What "strawberry juice" for smoothies?

The best smoothie shop at the local mall says they use fresh strawberries and "strawberry juice" (along with ice and frozen yogurt) to make their strawberry smoothie. I just got a Blend-tec and I'm looking to re-create it. What is the "strawberry juice" they are likely referring to, and where should I look for it? I assume it's sort of syrupy stuff, not like a Ocean Spray type of drink. Or is it best to cook strawberries and reduce the cooked juice?

Old thread but for anyone who might be looking for the same info about Chen, I ended up meeting him at Akasaka Shisen Hanten in Nov 2011. He even let me watch him cook for a bit! We were there for dinner, and we did have some inside info that he would be there.

Japanese stoneware

Just back from another amazing trip to Japan. Restaurants often have beautiful stoneware dinner plates and dishes for rice, condiments and pickles. Beautiful glaze, drips and fire marks. Easy to find in Japan but hard to pack and bring home. Is there any good source for these in the US? Mostly interested in stoneware dinner plates with dark colors/glaze like for tonkatsu, or stoneware rice bowls.

Homemade Bernaise Sauce

Dumb question - I can make a beautiful bernaise sauce, perfect consistency and flavor. But when I put it in top of a hot steak, it runs all over the place and turns into yellow water. How should it be served with hot food? Should it be served on the side? Or is it just still not thick enough?

I have a similar problem with applying hollandaise to warm broccoli.
