One thing I've come to learn is that pete and I seem to be polar opposites in terms of what we like. I really like HC so it makes sense that he doesn't.

At least, that's how it seems.

Recipe: Chicken Salad with Anchovies

Just made it for my lunch tomorrow. It's quite good. The anchovies really blend into the background and add saltiness and a hint of fish.

I have a problem with it though. I don't plan on eating it on bread so I doubled the mayo. It was too thick/pasty due to minimal mayo and the egg yolks suck up what mayo is in there and act as a binder. All in all quite tasty and will be made again. Verbatim or as inspiration.

First and foremost I'd do on the grill and the method T&B suggests is fine. I would probably just wrap in foil and not worry about the roasting pan. That's contingent on how much fat there is. Too much would probably leak out.

Anyway, the big thing about cooking it is how long and at what temp. You need a lower temp and it needs to cook quite a while. I did one on my smoker and it took 16 hours. It was unbelievable but very time consuming. The rule of thumb is (forgive me for not being 100% accurate on this. I'm sure I'll get corrected) for the brisket to maintain a temp of 195° for 4 hours for the connective tissue to break down. After that it'll be fall apart good. Finish as a whole on the grill and then slice off across the grain.

I've had them on pizza and liked it. Surprisingly. However I would not order that way. Just won't pick them off when someone else does.

I liked the Cambodia show and while you may not need a history lesson from a "putz" or a Rhodes scholar, some people probably do. Others may need a reminder of what happened over there.

I have not seen the show but people need to remember 2 things.

First of all, he says up front that he's not doing a "Travel" show. He tries to show what life is like for the people who live there. It's not about getting you to visit. It's about residing there.

Secondly, they aren't all gonna be great. He's only as good as the material and even with that, some times you just can't articulate things. It happens. It can be really difficult if you're heart isn't in it. Which I suspect may be part of the problem here.

Quite interesting. There are waaaay too many "Pretentious" burgers on there for my liking but over all I think it represents a pretty good cross section and I like that they seem to worry more about taste rather than provenance.

I do have one question, why not just eat the pie, runny and all?? It'll taste the same, just not look good. No waste.

You maybe needed to leave it in the oven longer. I've had that happen as well although from your description, that's unlikely.

I'd hit up Carolina's Mexican on E. Mohave in Phoenix before hitting the airport. It's almost walking distance and the food is awesome. Plenty of good reviews on here if you look.

Pesto Sauce from Costco

Up here they sell tri packs of 3 cheese tortellini. I saute a bit of onion, add pesto and cooked pasta. Add some smoked salmon and serve. I top with fresh grated parm.

Simple, easy and fantastic.

Also, I like to make a pizza with the pesto, shrimp and brie. If you do this, cook the shrimp first as the whole thing will be water logged if not. make sure the shrimp are under the cheese so as not too cook too much.

I'll lob up a few ideas for you. Just outside Chattanooga is S. Pittsburg. Home of Lodge cookware (cast iron) and a factory store where some good deals can be found. In town there is a terrific Triple D type place named Dixie Freeze. Fantastic food and desserts.

I can only speak in regard to BP because I personally spoke with Shant (the owner) and I can pretty much assure you they would not have other cheese options. They aren't doing that. They are making the Classic American Cheeseburger. That's it. That's all.
