Is Wild Boar Actually Wild?

I live in Italy and wild boar is wild. It's hunted and the meat is used to make amazing steaks, sausages and salamis. It's outrageously delicious and much sought after. Pasta sauce is the best of all: a slow cooked sauce with tomatoes, red wine and finely chopped carrots, celery and onion. The sauce is flavored with bay leaves and juniper berries. The meat can be ground first but I prefer to marinate it overnight in red wine then cook it in the sauce until it is fully tender and breaks apart. It's best served with pappardelle pasta and a sprinkling of freshly grated Parmesan cheese. Serve it with a Brunello di Montalcino.

It's a bit early for squash blossoms now. find a good farmers markets and let the zucchini stands know you'd like their flowers. Frequently they toss them.
What filling are you planning for the flowers?

Most (Or Oddest) Ice Cream Flavours?

Andrew, italian ice cream takes the cake. My local gelateria is opened in the warm months only and it's outdoor terrace overlooks the medieval hill town of Castelnuovo di Porto, north Rome. It has tons of flavors, both of yogourt and regular ice cream, all with natural ingredients. The owner makes it daily. My personal favorite is nocciola and dark chocolate. I make a few delectable flavors myself at our B&B including lavendar (from our home-grown lavendar), saffron and balsamic vinegar.

Yes, Mark,stick with the real deal. Try putting it in a blender with frozen fresh figs. so good you'll think you died and went to heaven!

Cooking in Rome, for locals.

I lived on Via Giulia many years myself (now have a B&B / culinary company in north Rome). If you're really nervous go to a local restaurant or Roscioli on Via dei Giubbonari and buy already prepared foods. It's all homemade and delicious. Then focus on just a few things to do yourself. Wine's are easy enough. I always find it's nice to go with local wines.....if they're good. Casale del Giglio (a southern Lazio winery) makes great wines, both red & white.

Suggestions for Traditional Italian Christmas Day Dinner Needed

A delicious option would be Pumpkin & Walnut Ravioli with a Creamy Sage Dressing. These can be made in advance and frozen, are delicious and beautifully festive, especially if made with a spinach pasta. I'd be happy to provide the recipe.

Posting again about my favorite cafe in Park Slope -- Trois Pommes

I prepare delicious scones frequently for our guests, but am intrigued by the pumpkin ones. How are they prepared as far as you can tell? I'll be in New york in January and definitely will definitely stop by Trois Pommes . Do they have a website? And where are they exactly please?!
