I will be travelling between Hartford and New Haven for business and would like to visit several bakeries/pastry shops on my journey. Looking for quality and innovation in taste and presentation. What suggestions do you have?

At Last! I have been telling anyone that would listen for years now that Patisserie D'or's are the best. (They are also two of the nicest people you will ever meet, )

If you want to try the other variations, their chocolate/almond will make you weak in the knees!

Patisserie D'Or in Oakville. My Favorite. If you are lucky enough to be there on a day they have the chocolate/almond ones, go for it!

Source for Hot Dogs and buns used by street vendors?

The largest supplier of buns for the street vendors is Breadsource/ B&A Bakery. They have a store on site for the public. They are at 1820 Ellesmere Road.

Whitby/Durham restaurants that don't suck

Apparently it will be an Italian Restaurant, Corrodo's (sp?) sign says opening soon, which I guess means sometime in the next three months.....

ISO: Low gluten flour

The wheat flour with the lowest protien is actually cake flour which is typically around 7%. Pastry flour will be a little higher, 8% or so and an all purpose should be in the 11% + range.

It is also interesting to note that Canadian AP flour is usually stronger than US AP flour, so if you are using a US cookbook, you can sometimes improve your results in non bread items by blending cake or pastry flour with your AP....

Bread Improvers in GTA

I don't think that you will have much luck for a number of reasons. Asking for a " bread improver" is like asking for "vitamins". There are lots of options, but unless you know what you are looking for you are unlikely to get the one you need.

Bread improvers are formulated to aid the various stages of bread production. They can target specific aspects of the process(reduce the time for bulk fermentation) or be more like a multi-vitamin and have something for every stage (improve volume, reduce floor time, prolong freshness etc.)

As they are designed for industrial applications they usually come in a 20 or 25 kg pack size. If you want that much you could probably contact a bakery supply company, but you would need to know what you were after. If you are friendly with your local bakery, they might be able to help you out.

Bread improvers are available in the UK, so unless there is a specific one your friend is looking for ( because it contains an ingredient frowned upon in Europe?) there doesn't seem to be much reason for you to haul it across the water for them....

It's highly unlikely that you'll ever see it here. You can't import ice cream, so all B&J is made here under licence. That's why the flavours here rarely change.....

Baker's Margarine

Baker's Margarine is simply unsalted margarine. It is typically used in cake, cookie, and bread applications as you would regular store margarine. There can be some variations, commonly there is no whey so it can be made KP.

The formulated fats mentioned above are designed for laminated doughs and with different melting points. Danish and croissants are baked at lower temperatures and thus have lower melting points than puff pastry which is baked at high heat (That is why it is more work to wash it off your hands!).

Best deals on appliances in GTA?

We bought a new house three years ago. I went to Appliance Canada on the advice of friends. The salesman didn't seem too interested in what I wanted. Ended up buying from Tasco in Mississauga whose all in price beat the pre -tax price from AC. I would suggest knowing what you want before you go, and hope you get the good salesman...

Frozen Croissants & Pasteries

Try Patisserie D'or in Oakville. Croissants are amazing( The chocolate almond is to die for!) and they did sell frozen for people to take home and bake.
