Does Fresh Pumpkin Beat Canned?

I agree that fresh pumpkin is better than canned and it is not that much trouble. You must use a pie pumpkin (the small sugar pumpkins). They have the best flavor. I cut mine in half and roasted flat side down at 350 degrees for one hour. (Scoop the seeds out first and roast them as well) Scoop out the flesh and run it through a food mill or a food processor, then add the rest of the ingredients for whatever recipe you are using. It also freezes well. May seem like a lot of work but if you have a small pumpkin from Fall decorations, why not make something yummy to eat!
