Hi,

Thanks for that, I was actually going to use Alton Browns recipe, but considered trying the cream of tartar.

The recipe you are using now, have you tried that as corned beef?

Substiture sodium nitrate with cream of tartar?

Hi,

I was reading this recipe for corned beef:

It mentions substituting sodium nitrate with cream of tartar, has any one done this or know if it works?

"A good color can be secured by using 0.4 oz of cream of tartar instead of the sodium nitrate. "
