HELP!! Uncured Sausage Needed! By Mail Would Be Nice...
Well, I'm not sure if I'm using the term correctly. I'm interested in sausage that's made without sodium nitrate or sodium nitrite. My understanding is that "uncured sausage" is usually made with celery juice which has similar carcinogenic properties as traditional curing but it's not hard on my stomach.

Publix just stopped selling the uncured sausage I love and I never bothered to notice what brand it was. So I'm hoping this unfortunate event can precipitate the entry of better sausage into my life. What's the best uncured sausage you've ever had? Big points if I can get it online. I love to get uncured/nitrate free sausage online from D'Artagnan (if you haven't had it, the wild boar, duck, rabbit, and venison are all spectacular in my book), and I'll continue to do that, but I just want to expand my horizons if I can. Thanks.
