Vegetable side for Cassoulet
Making duck cassoulet for a holiday dinner. I realize that it is already a hearty dish but want to serve a vegetable side as well. Are there any appropriate leafy green preparations, or what about brussel sprouts / haricot vert almandine or either sauteed in browned butter & balsamic?

My haole hubby enjoys my care packages but has never gotten used to me asking for freezer space at hotels, etc. He's kinda embarrassed, but for me the only shame is when I get home and no care package. Thanks JB. I called around and found a sale on the King size at Don Quijote for $2.89 each!!!!! After I bought my lot they still had plenty. Although true not around the corner the Ewa Beach Foodland was a short drive.

Wanting to buy and take home apprx. a dozen + of the jumbo or slightly smaller sausages. Staying in Kapolei at the Mariott Ko Olina and have a Safeway, Don Quijote, Costco, & Foodland close enough by. Your kokua would be appreciated. Leaving for home on Friday night so need to shop tomorrow (Thursday) in order to have time to freeze for the transport.

If you enjoy sushi then you should not miss Sansei Sushi in Kihei. Don't know if they have it any longer but they used to offer 1/2 off menu until 6PM. Super fresh.

So true about the paper bags. Luckily there is a supermarket chain here in N. CA that still provides them. As efdee mentioned above I was always surprised how beautifully the skin browned even while still enclosed in the bag. Looking forward to Thursday's meal.

A friend of mine just returned from Taipei and he was raving about this huge fried chicken patty from the Shilin Night Market Booth #50. Can anyone fill me in on how they achieve the size of this patty and from what part of the chicken? Also what the breading and seasoning consist of. Slow roasted overnight, deep-fried, BBQ'd, Kalua'd, brined etc. These are a few of the many methods I've used on the Thanksgiving bird in the past 30+ years. This year I'm returning to a past winner, guaranteed-to-be-good, and one of my all-time favorites (drum-roll please), roasted turkey in a buttered BROWN PAPER BAG! I especially like the quantity of drippings it produces although it will most certainly be fatty because of the butter, but a gravy separator remedies that. Some of you must be familiar with this method and just for fun I would like to know your thoughts, results, and creative suggestions.Thanks. I ♥ Thanksgiving.

Tandoori-style chicken in the oven plus a nice veggie side?
My favorite veggie side for tandoori chicken is a medley of zucchini, yellow crook neck squash, red bells, chunks of onion and Chinese eggplant sprinkled with mustard oil and tossed with minced garlic, garam masala, salt and pepper then grilled or oven-roasted depending on whether I grill or oven-roast the tandoori. Cucumber-Mint raita is a must-have as well.

ALWAYS used browned butter when making pecan pie. It's noticeable.

Can you revive "dried out" fudge?
My sweet daughter gifted me with a large chub of chocolate fudge that she bought while driving cross country from MD to CA. Unfortunately it was only stored in waxed paper bag and therefore dried out in transit. Is there a way to salvage it or can I possibly re-purpose it somehow? TIA
My 1st attemp at Beef Brisket - Flat Cut
I scored a beautiful 4# brisket at Costco today. I'm making the dry rub and BBQ sauce so now I would appreciate your expertise :) EVOO or mustard before rub, should the rub be applied just prior to cooking or be allowed to "cure" for a few hours? Tips?
FYI.....recently I gave my rusted out, holey, cruddy Weber kettle the heave ho so now I'm left with my propane Weber or my infra-red Wolfe broiler (I can hear your groans). Sooooo...It is what it is so foil method or not, grill, broil, or ?, can I cook this bad boy with good if not excellent results? Humbly TIA.

Not the same thing but I use Maggi sauce and Worcestershire sauce interchangeably. It taste like a blend of soy sauce & beef bullion and is great for boosting meaty flavors. Can be found in Asian markets in the soy sauce aisle.

My JH cafeteria made a layered pseudo shortcake dessert with angel food cake, strawberry jello, frozen strawberries, and a whipped topping. I LOVED the stuff!

Food bits and parts you fight for?
I'm with you on steak rind, chicken skin, and the coconut cream. My favorite parts from roast chicken are the wings and crispy tail. Used to crunch on chicken cartilage (made my children shudder) too but now it actually grosses me out. Ewww... and the veins in chicken legs, and the necks!!!
Favorite syrup for Italian sodas?
Hands down Monin and NOT Torani! I'm partial to the fruit flavors.
