Top 5 Chicken Wings (IMHO)
I've got to disagree. Have always been fanatical about VIrgils wings but hadn't ever tried Dinosaur until the past year - have gone a couple times now. I still think Virgils are noticeably better - although DInosaur's were easily second and well ahead of anyone else's I've had. Both times Dino's were a bit too charred, and uneven - tasty sauce but not quite as good as Virgils. You Dino wing fans who haven't tried Virgils ought to at least try and see for yourself.

Hum... Jumping to your own conclusions here, I think. I don't think there's anything backwards about Boston (well, except all the rotaries). I was just pointing out a fact. And wondering why. That's all. Not sure why you would think otherwise....

Thanks for the responses. I've already checked out a couple of these markets. Amazing how much there is in the North End. Also, incidentally, Whole Foods just got a batch of Morels in. I'm surprised, though, that the farmers markets close down here for most of the year. We have them open in NYC all of the year and it's a great way to get fresh eggs and meat and stuff from the root cellar.
What kind of coffee beans do you use?
I also roast my own beans that I buy from Sweet Marias. It's very easy. You can get a roaster for less than $200 and roast the best quality beans that cost as little as 5-6 per lb., half the normal price, so the roaster would pay for itself it a relatively short time. And you end up with the freshest coffee roasted however you prefer.

I'm in Boston for 3 months - living in Beacon Hill and spending my days in the North End. Can anyone suggest the best markets in these areas? I already know of Savonors (sp?) on Charles St and found the Whole Foods on Cambridge St. Just wondering if there are others that are good? For instance, where in these neighborhoods will I be able to find Morel mushrooms once they're in season? Any farmers markets worth noting?

I'm with you all. Virgil's wings should be in their own food group they're so good. Have been eating them for years and whenever I eat there with someone, I split an app of them and then have a separate order for my main. The blue cheese dressing they serve with them is great too, although totally unnecessary with the wings. They don't need anything else.
Haven't been to Dinosaur yet, but since others rave about those, gonna try soon. I just can't believe that anything could possibly taste better than Virgils

Virgil's chicken wings should be their own food group. Not Buffalo style but big wings, smoked, slow cooked and then finished on a grill with nice charred flavor with a great bbq sauce. Tons of great flavor and great falling off the bone texture but never dried out. It's the only thing I order there. Will split an app with whomever I'm with then have another order for entree. Also comes with a side of the best blue cheese dressing that I've ever had, which is completely unneeded cause the wing sauce is so good on it's own. Have been to all other major bbq places in NYC except for Dinosaur, as well as other well regarded wing joints (I love wings). Nothing else comes close.
Leaf lard
Flying Pigs Farms sells it rendered or raw at the Grand Army Plaza greenmarket in Park Slope on Saturdays. I'd bet they sell at other markets during the rest of the week. It's seems a bit pricey at $6 / lb rendered so you could probably find it cheaper.
Source for white truffles
Can anyone point me in the direction of a source in the NYC area for white Italian truffles that's as reasonably priced as can be expected for these? I'm aware of Dean & Deluca, but they're super-pricey. I would consider buying online if there's nothing else. Thanks!
Veal Stock question
Because the process takes so much time, and you only end up with 2 quarts of finished stock per 10 lbs of bones, I would prefer to make as much as I can and freeze whatever I don't use. I'm actually thinking the next time I do this I may double the recipe and buy 20 lbs of bones.

I'm planning to try other chefs stock recipes as a comparison to Kellers, cause he's so finicky. Pepin's sounds like it would be a good one to contrast and see if the "purity" of veal is all Keller makes it out to be.

Thanks for the responses! Keller writes that it is much cleaner in taste than beef, which he never uses for stock. He also never roasts his veal bones for stock for the same reason - clarity of flavor. He does roast venison, duck and chicken bones. Not sure why there's a difference.
Veal Stock question
I'm cooking Thomas Keller's veal stock recipe which calls for 10 lbs of bones, but I only have 6.5. I could make up the difference with either Veal Breast (which has little bone) or beef short rib bones. My inclination is to go with the veal breast, since he and others make a big deal about the benefit of veal over beef, but I also want to make sure it ends up gelatinous enough. Any ideas? Thanks!
Anyone know a good source for inexpensive whole ducks?
I used to be able to pay $1.50-2 / lb at Key Foods for frozen ducks, but that price has since doubled and I don't want to pay $20+ for a whole duck. Any inexpensive sources, ideally in Brooklyn, or beyond? Thanks!
