Texas Versus Cincinnati Chili

I am Texan, born and bred, and find issue with the definition of Texas Chili as one without beans. This is a heated discussion down here on a regular basis. Who got to make the decision that Texas Chili shouldn't have beans? Chili without beans?! The Horror!

Chipotle-Bacon Turkey Burger

This was an excellent recipe. We also decided we wanted to put sliced avocado on it, and then decided, why do plain avocado when you could do guacamole. THEN we decided, why not chop up the bacon (which can sometimes be hard to bite through) and throw it in the guacamole. The flavor addition was amazing on the burger and the guac helped keep the coleslaw and bacon evenly distributed in every bite. I think we're geniuses.

Broccoli and Cauliflower Leaves Are Not Compost

My Mom taught me an amazing trick that I'm sad I've gone this long without knowing. If you take the stem of broccoli and peel it really well with a potato peeler, you can chop or slice it up and it is tender as a woman's heart. It reminds me, texture wise, of water chestnuts.

The Basics: How to Make Basic Steak

Using this method with olive oil gives my boyfriend and I a serious case of what we have fondly dubbed "meatmares". Meatmares constitute a night full of fretful, sweaty sleep, complete with nightmares. We have tested this many times, in the name of Science of course, and turns out when this is done with an oil with a higher smoking point we sleep Meatmare free! Olive oil on high heat=cancer.

Tamarindo Borracho

I have liquid tamarind concentrate in my cupboard and would really like to use it instead of having to buy tamarind paste. How can I make the syrup using it instead and keep the concentration of the flavor similar?

Coconut Chicken Soup

This was super simple and delicious. Very well rounded flavor. The only things I did differently was saute the mushrooms first in some oil and Asian pepper sauce. I also added the juice from a whole lime which is probably more than what is called for.
