Losing faith in cast iron cookware
"Get your hands on an old Wagner". That would be your best bet! I bought a # 8 Wagner skillet just last Sunday for $5! With a little cleaning it will be slick and ready to go. There is still a LOT of the old iron out there. You just have to be patient and LOOK!

The Lodge I speak of was the "One Notch" Lodge which was cast before WW II. It is light, polished and desirable by collectors these days

The Lodge from 60-80 years ago could compete with any on the market as far as quality. They have been in business for 100+ years in Tennessee.
The reason most folks strip old cast iron is because they don't know how it was used or what was in it. I would never strip a family heirloom.

LOCKHART BBQ is starting to slide downhill
Soon after Kruez Market moved to thier new location, I stopped in to try some sausage as that is my "benchmark" for barbeque. Maybe it was a bad day but I could not finish what reminded me of greasy saw dust in a casing!
Food & Wine from Austin to Ft. Worth (long)
Te Grist Mill in Gruene Texas has great food and atmosphere! It sits right on the banks of the Guadalupe River in downtown Gruene and next to historic Gruene Hall. Gruene is about 4 miles west of I-35 and 45 minutes south of Austin. There is a great little wine store across the road as well. Great weekend get away with LOTS of Texas history to see. A++++

seasoning cast iron: contradictory methods, and which is best?
The two methods I WOULD NOT use are putting iron in a hot wood fire to burn off the carbon or sandblasting cast iron. With both you take a chance of damaging to iron in different ways
OATMEAL-O-RAMA – The best oatmeal
Recently went to steel cut oats. You HAVE to make time to have the best, or just presoak.
Tried McCann's and Bob's Red Mill brands and Red Mill came out on top. Top with cinnamon and Splenda and pig out!
Not All Steel-Cut Oats Created Equal
Tried the McCann's Steel Cut Oats and have no complaints. Then I tried a sack of Bob's Red Mill Steel Cut Oats. Have to say that after trying both brands, I prefer the Bob's Red Mill over the McCann's brand. JMO. Either way, I don't see myself going back to old fashioned rolled oats any time soon.

Threw out all "non-stick" surfaced utensils years ago. domestic cast iron, domestic Revere Ware and Corning Ware are about all that is kept here now. Problem with sticking, sorry but many "rush" for perfection these days. Our mothers & gr. mothers used their C/I 3 meals a day. My health won't permit it either.
SEASONING MORE TOXIC THAN NON-STICK? My Granny's old skillet had about 3/8" build up on it when she died at 98 and it NEVER made a bad meal.

The crazy thing about this is that most of that frilly celebrity endorsed cast iron made in RED china is more expensive than the domestic made Lodge! The older Lodge Wagner or Griswold is of MUCH better quality than the foreign made iron. If older domestic iron is bought used, it can be brought back to very usable life with a little effort. USA!
I feel that with 79 incidents it must be a manufacturing problem.
Meat Market in North Central Texas
It's a ways from Abilene but L & R Meats in Belton is tops in Central Texas area. They make thier own sausage and it is to "kill for"! Green's Sausage House get the next nod in Zabchekville (East of Temple on hwy 53)
Best BBQ in Texas
Soon after they hauled the coals down the street to the new place, I stopped in at Kreuz.
Had heard a lot about it and thought I would try it. Got two sausage links for a late breakfast and put it to the test. Sorry but it reminded me of floorsweepings and and red chili grease when I bit into the first one. Never touched the second one. May be better now but i'll pass. Ate at the church in Huntsville and it was good when I was there.
