What else can I brulee besides creme brulee?

Not to my taste but a restaurant here Vista Grill used to do a Foie Gras Brule.

Culinary Uses for Pickled Jalapeno

Great addition to guacamole and makes for a different bruschetta.

High-end-ish restaurants near the airport... ?

Closest is Zachary's at the Bristol Place. La Castille and Topiary both excellent. Went to Zorro's last year. It was pretty bad.

All-Inclusives that don't suck...

Depending where you're coming from Puerto vallarta may be more convenient. Gran Velas in nearby Nuevo Vallarta has the same reputation as the one in Cancun.

Garbage disposal uses

Definitely no asparagus peelings. Plumbers are expensive.

Hoof Raw Bar

"Mushy Spot prawns" From the BC Spot Prawns website:http://www.wildbcspotprawns.com/handling
Wild BC Spot Prawns harvested “live” should be cooked immediately or have their heads removed as soon as possible. After the heads are removed the tails should be thoroughly rinsed. Spot prawns have an enzyme that begins to permeate through the tail and turns the meat mushy. Removing the head and rinsing the tail keeps the flesh firm. The head of the prawn can be removed from the tail by swiftly turning it and pulling it away from the tail.

Le Petit Canard report - HIGHLY HIGHLY recommend for reasonable priced dinner in Paris

I have never heard the expression "cream of duck liver". Is it a brule or mousse?
Pictures were great-thanks for sharing.

Nobody mentioned ice cream!

This is not a joke ... how do you open a jar of Pommery Mustard?

Ingenious! But who has a signet ring and who uses envelopes? I guess you could make the wax impression, scan it and add to an email.

This is not a joke ... how do you open a jar of Pommery Mustard?

I haven't had a big problem with the cork but the wax drives me nuts. How did you remove the wax on your jar?

Other question about puerto vallarta

La Leche isn't that fancy, it's the food that's supposed to be the star. I would add Bianca Blue, Hacienda San Angel, La Palapa, Vista Grill and if you get out to Nuevo Vallarta the restaurants at the Grand Velas and La Casona.

Puerto Vallarta Zona Romantica dinner suggestions

Well Puerto Vallarta and that area in particular is a tourist town so the restaurants are designed to serve visitors. As I said No Way Jose is currently the most recommended Mexican restaurant in the Romantic Zone. You're right about Basillio Badillo. There are a lot more restaurants on the street that are not authentic, noisy and crowded.

You didn't say exactly where you're staying. You should be aware that there is a major tourist convention in PV. The area particularly north of the RZ will be congested on Sunday and Monday.

Puerto Vallarta Zona Romantica dinner suggestions

The problem is too much choice. In the main tourist area there is Bistro Balsamar, Cafe Bohemio, Coco's Kitchen, Don Guacamole, El Dorado, just to name a few of the ones that would be good. these can be checked with Google. But there are many more you can check out along the waterfront on Pulpito and up Basilio Badillo.
Authentic is somewhat relative. Currently I think the most popular is No Way Jose where you probably need reservations. http://www.nowayjosemx.com/index.html

Punta Mita suggestions

You have probably also found Cafe des Artistes Del Mar which is the upscale restaurant on the El Anclote beach next to a string of inexpesive beach restaurants that essentially wrap up the area's dining.
For more and different you're going to have to go further north to Sayulita or south to La Cruz.

UV deep fryer ... where can I get it?

Not true. That's why it's now acceptable to cook french fries starting with cold oil. Many references on Chowhound.

Did Bambi Ruin it Forever in America? [moved from Home Cooking]

And then there are all the restaurants that believe it necessary to tell people on their menus that their dolphin isn't the same as Flipper.

ISO: Dumplings (the flat, noodle type) recipe

French Canadians call these flat dumplings Sliders. That really confused me when I kept hearing this term used for a kind of American hamburgers.

Best restaurants in Puerto Vallarta in 2012?

I don't know a Las Margaritas with a view. I think you mean Las Carmelitas. Haven't heard anything about it for a while and phone number shown in local guides is not in service but taxi drivers should know if it's open.

Looking for Update on Nuevo/Puerto Vallarta Dining Scene

You should take another look at this board, the most recent reports are January this year.
Bruce who owns Teatro Limon has a personality as big as he is. Haven't been there personally but I have heard nothing but excellent reviews that are positive on value for the money.

Nuevo Vallarta/Puerto Vallarta restaurants?

Good time to go to the NV Fajita Republic. In summer they are infested with mosquitoes.

Truffles

Story on one of the US networks a couple of days ago said that China exported more than 22 tons of truffles last year. Unfortunately they don't match the flavor of French or Italian truffles. Some unscrupulous cooks and packaging companies are mixing them with the real thing.
And a link http://www.nytimes.com/1995/02/15/garden/the-invasion-of-the-chinese-truffle.html

Mexican Coca-Cola [moved from New Jersey board]

Just looked at a can of Mexican Coke and it only says "azucares" which translates as sugar. So i looked at a can of Diet Coke and it says "azucares" where the calories are shown as zero. But in the ingredient list they show aspartame. Looks like Coke translates azucares as sweetener.

Why are chicken breasts so HUGE?

Incredibly timely. I just bought boneless, skinless chicken breasts at Costco. Normally they have been packaged as three half breasts in a plastic package with three sections, a total of nine pieces. But this package only had two half breasts in each section for a total of six pieces. When you're cooking for one that monster is just too much food. While I like chicken I don't really want to eat it all week.

Puerto Vallarta: Cafe Des Artistes or Hacienda San Angel

Obviously a very personal kind of decision. Hacienda San Angel I think is a romantic kind of place with a great view south, excellent food and service. Cafe des Artistes is really two restaurants. One general that serves a typical intrnational menu in a very nicely decorated rom. The second is Cocina de Autor the "gourmet" section with a flexible tasting menu. No city view in either section. Both have an outdoor area one a garden the other a patio but it's cool this year so indoor is better. The only other upscale indoor restaurant in PV that would qualify is Bianca Blue with a beautiful room great menu and excellent service.

As I say a very personal decision. Be sure to post your decision and the result.

Best restaurants in Puerto Vallarta in 2012?

Trio is pretty good. I don't think Barcelona Tapas is worth climbing all the stairs. Recent reviews of El Arrayan haven't been very complementary No Way Jose is probably a better choice. La Palapa is good for breakfast but I prefer lunch because there's more action on the beach. It's also a romantic spot for dinner and their bar for a late night drink. For really fancy Hacienda San Angel, Cafe des Artistes Cocina de Autor, or Bianca Blue. For French La Cigale near the Cathedral is very good.
Bucerias is divided into north and south sides by a ravine. Most south side restaurants are not on the beach so the north side is better for an afternoon visit. Just get to the main square and walk along the beach road till you see one you like, Adauto's is often recommended. Best restaurant Mezzogiorno isn't open for lunch. Here's a Bucerias reference http://www.bestofbucerias.com/index.php

Unfortunately being on the ocean seafood is everywhere but I'm sure you will still find lots of choice.

Restaurant Websites - At this point they should pretty much be mandatory [moved from General Topics]

And it's not enough to just have a website it needs to be maintained. Too many don't have the interest or sense to regularly up date the information. One of the more famous restaurants here even forgot to pay their renewal fee so the website is now available to their competition.

Vanilla Beans in Cabo or Puerto Vallarta

On the MB it's also reported you can get them at the Botanical Gardens but that 's probably too much of a trip unless your really committed. http://www.vbgardens.org/
