Sodium Alginate and Calcium Chloride

I have located and prucased the needed ingrediants, which are being shipped to me. My next question is how far in advance can the "caviar" be made (i.e. 2 hours before a dinner party), and what is the best way to store it if it can be made in advance. Thanks for the responses so far.

Groceries near Lakes on Eldridge Houston

I live in Cypress, Tx. (close to where you are) and wanted to let you know that there are several private farms in the area. There is an organic farm on FM 2920 at Park Road in Tomball as well. You should be able to find the freshest vegetables within season at these locations. If you "Google" fruit and vegetable farms+Cypress, Texas", you should get a list of them.

Thanks Shanghai Sam for the suggestion. I'll look for the calcium chloride there. I had read on one of the other blogs/forums that Randalls Grocery in the Houston area carrys what I need, but that did not prove to be accurate. Still looking. Sure wish a restaurant chef could chime in and let me know where I might purchase it.

LOL......Well, in a weird sort of way I am making a food bomb. I want to make both fruit and wine "caviars" to serve with certain dishes. When you bite into each of the individual "caviars", they explode or release the liquid that you made it with (i.e. wine, fruit or vegetable juice).

2 days in Houston: Seeking Best steak and Mexican Food

I would vote for Vic & Anthony's for steak. Pricey but everything was spot on. I honestly cant say what the best Mexican food place is as there is so many here, but Lopez on Willcrest is good as is Tony's on Ella Blvd.

Absolute best burger in Texas?

My husband and I have been on that quest ourselves. We recently read the list from Texas Monthly for the 50 best burgers in Texas. The Grape was listed at the top, if not number one. We have eaten at a few of the places on the Texas Monthly list. The best one so far that we have had is a little combo grocery store/gas station in Ellinger, Texas called Hruska's. FANTASTIC good old fashion burgers with great flavor. They also make some killer kolaches (both sausage and fruit). Hruska's knows what they are doing for sure. It is on Hwy. 71 North about 5 miles if you exit from Interstate 10. Don't blink or you will miss the little intersection where it is.

Texas Chicken Fried Steak

So far the best chicken fried steak that I've had is at Goodson's Cafe in Tomball, Tx. It is just slightly northwest of Houston. It has even been featured on the Food Network. I live fairly close to Tomball, and when out of town guests come, that is the only place they ever want to go every time they are here.

Does anyone know where in the Houston, Texas area sodium alginate and calcium chloride can be purchased in small quantities for the home chef? I've only located it in large quantities so far.
