Road Trip Review: Lotus of Siam - Las Vegas, NV (w/ photos!)

What a great writer you are! Lotus has been one of my favoriet restaurants for years, but your review made me want to go back and try new things. I am also a huge fan of the garlic pepper prawns...next time you have to try the shells! They are crunchy, like really crunchy potato chips! If you are not a pro food writer, I would suggest you look into it. Truly great! :)

What would you do with these ingredients?

Wow, did you hit the best farmer's market ever, or what? With all of those herbs and noodles, I would do an Asian soup, like Pho maybe. For the miso, make a marinade (which can then be reduced for a glaze) for fish...black cod works great. Mix it with citrus juice, mirin, sugar, and marinate the cod for at least a day, but up to 3 days. Remove it from marinade, pat dry, broil for a few minutes til caramelized...brush with reserved boiled marinade. With the Korean pear, grate it into a marinade for the rest of your short ribs. Make a bulgogi marinade (ginger, garlic, soy, sesame oil, pepper, honey, etc). Can I come to dinner? Haha.

Clam storage emergency

I think the idea of the flour, besides cleaning, was to plump up the little guys too...kind of a sad little last meal :(... so it probably wouldn't hurt. I did it with clams and they were quite tasty. Who knows if the flour actually made a difference. Living in Las Vegas which is far from any super fresh shellfish, I am willing to take any precautions when cooking with them. Then again, if they are contaminated, there's nothing I can do to change that.

Clam storage emergency

Julia Child used flour in the same way to clean mussels in MTAOFC, so I think it should work the same way with clams.
