I also dont think it takes tremendous skill to make a good pizza. I think the secret is in the ingredients and the oven. That and the willingness to get away from the Montreal pizza model.

Bottega tries this, but where i found that it fails is in the snootyness and pretention of it all.

In my opinion, pizza is whatever you want it to be. Should pizza have bacon on it, a big glob of salty tomato sauce, should they spray garlic oil top?

I used to say i hated pizza, til i tasted some in New Haven, Boston, Italy... Now i realize i hate pepperoni, mozarella, fake tomato sauce, thick bread-like crust: aka what most people say is pizza.

Gimme olive oil, ricotta, pancetta, fresh tomatoes... And yes chicken if i want it! Yummy!

When the waiter comes to take the order, tell him it will be different checks. This way, you make it easy for the waiter and there is no misunderstanding.

This is, of course, a matter of culture. In Quebec, the waiters often assume that the checks are split, or asks. It's the norm here. If there is a large group and one person is paying, then they actually mention to merge the bills before hand.

From the exerp, you will need a proof of purchase whether you want a exchange or a refund.

I got hemp seeds at a downtown health food market. I forgot the name, it's under Simons near the food court and a video game store. I believe they had other forms then whole seeds, so you could check for powder there.

(packaged) ice-cream in Montreal - where to find?

A new place opened up about 3 months ago in VSL, between Cote Vertu and Du College metro: La tache de Café.

Boyfriend and i dropped by there by chance yesterday for coffee and i noticed a beautiful homemade icecream counter. What caught my eye was the special flavours. I guess the chef saw the twinkle in my eye because he came over from the back, all smiles, and urged us to try his flavors. He makes them himself, works out new recipes. I estimated about 20ish flavours of frozen yogurt, icecreams and sorbets, color coded by their handles (clever!). We tasted many flavours, all amazing! The frozen yogurts blew me away.

Upon inspection i noticed there were a lot more flavours in the take-away tubs displayed in the freezers. A good sign, means he makes just enough quantity to sell them, so it remains fresh.

Here are flavours i remember seeing:
chestnut, lavender, pecan, cinnamon, chocolate, green tea, rhum and raisin, mango froyo, orange froyo (bought it), smoked apple, nutmeg, vanilla, white chocolate... there were many more, particularly in the freezer... Sold in 500ml containers.

Anyone been to Birks cafe?

Yep, been to a few places in Montreal. Gryphon d'or is the best i've tried so far. Their scones are amazing and the portions were generous for the price.

Great cucumber sandwiches, i like the little salmon cannape. Wonderful shortbread cookies and all the other sweets of course.

We were offered to take some home before we even asked, i guess we're not the only ones unable to finish it off.

I loved the ramen at Yuki Ramen. The noodles are made fresh in front of you, and loved the hanjuku egg in the porc ramen. Yummmm

Spotted at PA supermarket in Laval so i assume they might have it at other locations. Were something like 1.49$ per lbs i think.

That depends on whats NOT on the menu. Chat papri, okra masala, a particular type of naan not listed... Stuff like that the isnt always on the menu but they have the ingredients anyways.

Oh, he's right! Come to think of it, often when i go to indian or chinese restaurants, i just know my favorites. Even if they aren't on the menu i ask for them and they tell me if they can make it. Usually it's pretty traditionnal yet simple stuff.

Hmm i've never heard of this. There are specials of the day, and the waiter will usually let you know about them.
Also, some places do indeed have 2 wine lists. The main difference i saw in these cases were the prices. The other wine list started at 200$ a bottle, understandable why they don't show you that one right off the bat....

Where to buy Shiro Miso paste in Montreal?

I know that this thread is a bit old but i just visited Banzai, in NDG. (2120 boulevard Decarie, near Sherbrooke intersection)

They had a large selection of miso paste in the fridge section (it's apart from the instant miso powders). Good prices too!

PS: they have a parking lot.

Why is my pesto turning brown?

From an article in allrecipes: "Fresh basil is very delicate, and will turn brown if it gets very hot or if it's exposed to air for long periods of time. Many cooks use fresh spinach as well as basil in their pesto to help maintain its brilliant green color."

Could it be the temperature of your ingredients? Maybe it gets hot in the blender?

If you're guaranteeing that the ingredients and brands used are exactly the same, then it might have something to do with the way you're doing it, or the environment.

Or it might be that one of your ingredients (obviously not the basil) is older and has changed on a chemical level. I'm not a expert on pesto, i mostly do chocolateering, but age and method is a big difference in baking. Maybe it does with this as well...

PS: Maybe you could try the spinach trick, to cheat?

Lavender infused ganache (which you can then use in a cake, macaron, chocolates etc).

Just as you would infuse anything in milk or cream, infuse the lavender. Sift it out then use the milk or cream in your recipe.

Lavender pairs great with caramels or chocolate.

Average daily food costs in Italy?

-A meal at a local joint can vary between 8-14 euros for lunch or standing up/fast food.
-A pizza is around 7-8 euros
-For breakfast, a cappuccino and pastry will go around 2-3 euros.
-At the grocery, it's hard to tell, but you can eat well between 5-10 euros.
-A nicer restaurant may be around 20+ euros. Sky is the limit of course.
-Avoid the words "tourist menu"
-apperitivo is served in some cities, such as Milan, Florence, Verona and i saw very few in Rome. For the cost of a drink (6-8 euros) you have access to a buffet. Sometimes the offerings are mere snacks, sometimes you can have a really good meal.

GROCERY:
-A ok wine bottle at the grocery usually starts around 2 euros
-100 gr of prociutto feeds 2 people (with wine, cheese, tomatoes bread etc), is about 1-2 euros.
-mozarella is about 1-2 euros a ball.

Well... you should have an idea by now. It really depends on where you go in italy, every place has it's own specialty and the little towns are less expensive of course.

Le Lawrence for brunch, or perhaps Byblos Le Petit Cafe for a persian omelette, sweet breads and a cafe-like ambiance?

For croissant hmm, i get them in several places, i just know how to spot good ones and bad ones because we're so used to eating them here. I like Marius et Fanny, La Brioche Doree and i hear Olive et Gourmando is great. Gascogne is really good too.

Anyways, in France they practically dont eat breakfast. Those that do eat a pastry or cereal with chocolate milk or cocoa powder... Don't ask me why.

But agreed, if you want croissant you go to a good french bakery or cafe. These types of places serve excellent coffee but rarely anything that requires the use of a kitchen or a cook.

Similar, a breakfast joint wont normally have a baker or a selection of pastries such as croissant.

I'm curious, i work downtown so i'm always glad to see a new lunch spot open up, especially something that adds something different.
