"I understand why condiments appeal to some people, but I think coating something that's inherently flavorful with butter or olive oil is a lazy person's way to add flavor."

No one is "coating" anything. Finishing with olive oil is pretty much understood to be a drizzle. Thanks for calling me lazy; at least I am in good company with Julia Child, Jacques Pepin, hundreds of chefs all over Italy, and many , many more chef's worth their salt.

Why do people find it so strange to take photos of your food?

For me, food is to be eaten, savored and enjoyed. My memory of food is much more important than a picture of it. I just do not get staring at a photo of it.

No on ever said the words "douse" or "pour" until you. The word most used has been "finish" which most of us have taken to mean a drizzle or the equivalent. Big difference.

I agree.

I've fought the Batali wars here on CH all too often to argue with others. I'll just say that while I am not a fan of the man himself, I have enjoyed myself at every one of his restaurants I've been too and frequent one here in NYC at least once a month. I have been to Italy about 7 or so times in the last 10 years. I don't claim to know every region's cuisine inside and out, but I have had enough meals in Italy from north to south to know the Batali/Bastianich empire's restaurants serve an Italian-based cuisine that adheres to the philosophy of Italian cooking. Their restaurants here in the US are of course going to interpret this philosophy through North American "eyes" and that is what is presented at their restaurants; some like it, some don't. That's fine. I love the food and I often recommend his restaurants to people looking for good quality, near-to-authentic Italian food.

People in Italy cook Italian food at home, but they go out to eat frequently... in Italy... where the restaurants mostly serve... Italian food.

Tell me how you make your Ground Beef Tacos

I make a seasoning mix of:

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Then I brown 1 lb. of freshly ground beef, drain the fat and reserve the meat. I toast the spice mix in the hot saute pan for a minute or so, add back the browned meat, saute for another minute and then add about 1/4 cup of water, cover and simmer for 5 minutes. Serve with warm flour or corn tortillas, fresh salsa, chopped avocado, shredded cheddar, sour cream and hot sauce.

Do you put dressing on a salad? Ketchup on a burger? Mustard on a hotdog? Mayo or an aioli on a sandwich? Finishing a dish with olive oil is the same idea. The olive oil is used like a condiment. In Italian, the action is called "condire" and it means "to dress." This is a very common practice in Italian cooking (and other cuisines) and has long been used in the American way of cooking by many restaurants and now more and more by home cooks.

1) don't have an appreciation of the actual flavor of the underlying ingredient
or
2) don't have a high quality underlying ingredient (i.e. freezer burned steak is more palatable when doused with grease. fish, past it's prime, can be salvaged by serving it covered with fat of some sort.)
or
3) don't really know how to cook to preserve/highlight the actual flavor of the food."

Yes, all those wonderful dishes I've had in Italy that were finished with a drizzle of olive oil were cooked by idiot chefs who were using inferior ingredients. I should write those restaurants for my money back.

OK, here goes. You posted, I reply.
This does not look appetizing at all. I am sure it was delicious in person, but that picture does not make me hungry in the least. Food is a funny thing to take a picture of; if you cannot realistically capture what it looks like, it just looks bad. Sorry, I do not mean to hurt your feelings at all. But you posted the picture to prove your point and I am using your picture to prove mine. It's all good though. :)

Edit: I speak from personal experience. I posted a picture of focaccia that I had recently made on the Home Cooking board and when I went back to look at the thread I though to myself, "Why the hell did you post that picture? It looks awful!"

wedge salad a rant

Not the same. Got to have the crisp neutrality and sturdiness of iceburg to carry the rich dressing. Perfect balance. I have tried it with romaine hearts and while good, it's just not as good.

Posting a pic or two of a grandchild is of course fine. Posting 10 of the kid eating his first (whatever) with food all over his face and hands, with captions of how "cute" he is, not so cool. And then more the next day, and the next day, etc. etc. You get the "picture." ;)
My point is that with the advent of digital cameras and social media, people who tend to brag and boast are encouraged and given the tools to do this to excess. There's a line that is all to often crossed these days.
