Katz's Pastrami

So I have set out to make my own pastrami, and to ensure its the best, I am trying to model around the best, Katz's. While I have more or less designed the recipe, the only thing I am unsure about is the cut. While I have always thought it was made from brisket, seemingly the point cut, it seems it may be from plate (navel) cut. But I am skeptical about that because the plate cut is where skirt steaks come from. I tried calling katz's to ask and the guy said brisket, but didn't sound 100% sure. So does anyone know for sure?

Went to Paco Meralgo one night on the corner of muntaner and cortega(corsega?). Was really really good. Defintely recommend. I tried one of my gf's steamed mussels and liked it even though I hate all seafood. Really good Bomba, pan tomaquet, and they have this really good steak cubes tapa that everyone in the restaurant was ordering. Then for lunch the next day we to La Fonda for lunch which is a seafood place in the Olympic Port. They had a 9.26 Euro menu which had four courses. Was really good as well. My gf was able to get mussels for app, and fideua for main. Then for our last dinner the hotel recommended we go to Verdi street in the Gracia, saying there are a lot of restaurants there but there were maybe 3 total. So we walked back to Gran Gracia and went to a random taperia called Bar el Picoteo. It was pretty much the kind of place id been looking for, a locals place. Really good food without a fancy pretentious like atmosphere. Manager was a really nice guy, and id say they had the best patatas bravas and tortilla bocadillo. Good sausage from Leon too. They were out of Bombas though :(

Anyone have a recipe for Bombas, or a good source for Spanish tapas recipes in general?

It is very good. Definitely should check it out. But then its Gallegan, not Catalan. I guess the big problem is coming to Spain and France in August when all the locals places close and mainly the tourist crap is open or the mediocre restaurants.

Will report back, going to Alba tonight. Recommended by the hotel staff.

We*re not going to arles tonight; tomorrow for St Remy and villaneueve. Where should we go for dinner thats a 10-20 min drive from courtine gare? There is only few recommendations fro, the link you gave me, plus it doesnt say much at all about them so I dont know if it meets my criteria.

I am going to be in Avignon today and tomorrow and would like to know where we should eat. We have been going to a lot of recommended places only to find they are on holiday. We have a car and open to surrounding areas like st rent and such. Whats good for cheap (under 20) and what's good for a lil more expensive? Is bistro du paradou open or on holiday?

La rioja in astoria is the best. Owner is from galicia. They sell meats cheeses and canned goods too.

Yes I have done my research and unfortunately it seems that a lot of the recommended places are also closed for August. Most I saw were closed before we tried to go, like Quimet i quimet, but then we went all the way from Montjuic to Cal Pep but it was closed as well.

Then we made our way to Caelum but the cave is being renovated. We ate upstairs anyway. The dessert I picked out looked really good but had a really peculiar aftertaste. At first I thought I was going to get a curious response for not having a more intricate palate but I am glad I complained. The manager tasted our cake straight from our table and agreed. After much trying to communicate in Spanish, she said pintura, and I knew that taste must have come from the construction.

So I ask, we have 2 dinners plus a lunch coming up in 5 days, driving up to france, if we wanted to spend no more than 70 euros for 2 ppl, where should we eat.....that isnt on vacation?

Me and my gf are in Barcelona and so far have had a few decent meals plus one horrible meal. But so far we havn´t had that meal that makes us understand why everyone says northern spain has the best food anywhere. The food we have had at one galician place in NY has bested all these places so far. The first meal we had, we got to the hotel and asked for a recommendation, went there but the place was closed and decided to try the place right next door. Besides the patatas bravas, its up there with one of my worst meals. I believe it was called Los Coconchas?

Though I wish we had reservations, and the money, for El Bulli, What are your recommendations for places to eat? We are staying by the Engineering School on Comte de Urgell. We will be around Montjuic and probably las ramblas today. We are looking for mainly reasonably priced places except for maybe one great place thats well worth it. One person at the hotel said his favorite is La fonda del mar by the olympic port.

Actually i just thought of something else too.

My uncle once made this for me. Crack two eggs straight in a pan, dont worry, if the yolks break but its better to break them later on. when white are halfway cooked break the yolks and thow on some meunster or mozzarella and sprinkle on some parmagiana. As soon as the cheese melted move onto a plate enjoy. Its best to catch so some of the yolk is still runny.

Another thing from when we would make breakfast when i worked in a restaurant. Which is great because you have all these ingredients already chopped up and you can throw whatever you please. They also only used white pepper, which in my opinion gives more flavor and spice than black. So scramble up some eggs. Throw in some chopped red onion and diced ham , salt, white peper, and mix (you can throw in some chopped fresh parsley if you have, though its mostly for color). Pour into a pan and mix occasionally to have it cook thoroughly and prevent it from burning. Next take a toasted brioche, smear on some cream cheese, throw on some of the eggs and eat your sandwich. That there is a damn good egg sandwich. I never thought of putting cream cheese on an egg sandwich til there. Try throwing in some diced garlic into the egg mixture to add a different taste to breakfast.

Sorry to hear that you have trouble with breakfast.

Here is something I make and it takes just two ingredients. Its scrambled eggs with american cheese but, at least the way I make it, it is something better than average.
So lets say you are making one portion. You need 3 eggs and 2 slices of american cheese. Break the eggs into a bowl and beat them well for about a minute. Its best to hold the rim of the bowl, tilt it, and whip the eggs in the corner using a fork. Heat your pan with some cooking spray on med-high heat. Wait a min or so til its hot. Pour the eggs into the pan.

Here I will try to articulate the process because I use a lot of intuition when it comes to cooking so bear with me.

Let the eggs start cook, occassionally using a spatula to push the cooked eggs away from the rim towards the center and angling the pan to let the liquid touch the pan. Now when its mostly cooked, still wet though, through the two slices on top. Use the edge of the spatula to chop the cheese up, along the with eggs, then keep mixing it in the pan until the cheese is melted into the eggs. Then just put out onto a plate and enjoy your cheesy egg scramble.

Also if you want to get fancier, you can try eggs benedict. Though I don't suggest you try making a hollandaise sauce because its hard to get right. But the concept behind these eggs are simple. Put a poached egg ontop of an english muffin half with some combination of breakfast meat or vegetable with some kind of sauce.

So split your english muffin, toast and put the two halves on a plate. Here you can choose to top it with whatever you want. The classic is a thick slice of ham topped with hollandaise. Something I've done was to spread some goat cheese on the muffin and put some thinly sliced avocado on top of that, place the egg on top and put a big piece of fresh basil right on top of the egg. Now to poach an egg:

Boil a big pot of water, with two splashes of white vinegar in it. Crack an egg at a time into a small bowl, making sure the yoke stay in tact, then pour the egg into the water. Repeat with the second egg. After about a minute or two, Use a slotted spoon to gently lift the eggs out of the boiling water, ONE AT A TIME. Place it directly onto the english muffin.

So for that eggs benedict idea you can try to experiment but try to limit it to no more than 3 toppings besides the eggs.

Don't give up and keep experimenting.

FTW the halal lamb and chicken at the pearl and wall st cart. Ask for more meat instead of a drink, much better that way on terms of quantity. With that, for $5, makes it one of the best choices for a cheap, filling, good lunch IMHO.

Didn't mean disrespect girls sandwiches, while they do taste good, they just aren't as satisfying and leave an empty space in my stomach for more turkey, roast beef, and cheeses.

Also though its really f'ing hot out, whats the best place for noodles soups?

Just at Sandwich house. I had the grilled chx with avocado on a baguette and it was very good.

I am still looking for a real sandwich place. Something that would rival Sal the sandwich king of astoria, if such a place exists here. I don't want these pretentious brie arugula and apple with balsamic whatevers. I want my turkey and salami with american hosed in hellmans and spicy brown that is big enough to feed a family of four for only 6 bucks. Any recommendations?

Went Sophies Cuban yesterday. Got the Roast Pork sandwich. Was really great. Defined a sandwich for me. Grease would rival and beat a philly cheesesteak. Definitely worth a try though a lil expensive at $8.

Went to Diwan Shas(?) today on william, for $8 got chicken tikka massala rice and potato/pea curry with a big naan. Was pretty good in terms of quantity and quality, though it was kinda bland for indian, next time ill get the vindaloo to see if it has more taste.

Saw that creperie, its across the street from the indian place. Too bad its not
