Tramontina Tri Ply Safety Issue - Edges Like Knives

This post made me pull out my Tramontina sauce pan and inspect it - sure enough, the aluminum layer is about 1mm lower than the stainless steel on either side, all around the rim of the pan. It's also full of tiny holes, like it's being eaten away. However, unlike OP's pan, mine isn't sharp. I'm sure this has happened because I put it in the dishwasher regularly, and use the Finish packs. It's probably pretty harsh.

Rice cooker suggestion please

I really like my Cuckoo (big-time Korean brand) rice cooker, but it's probably what you would consider a "fortune". It was like $300 or more; I don't remember the exact price. It's the high end induction + pressure + micom type.

It produces excellent rice when it comes to koshihikari and similar short-grain east Asian-type rices. Other types of rice... not so much. They range from "okay" (Jasmine/Basmati too sticky) to completely inedible (the American long-grain white generic rice turns out hard).

So... match the rice cooker to the type of rice you like. Check to see what kinds of rice are recommended and what programs/settings it has.

Sayonara. I regret settling for regular LC instead of paying a little extra for the Signature stuff. I hate these teeny-weeny-tiny handles.

how often do you use your gratin dish?

I have a Le Creuset stoneware gratin dish, and they say it can be used under a broiler, as long as the max. temp. is 500 F/260 C and there is a 2.5+ inch gap between the dish rim and the heat source.

Some Whirlpool electric/glass POS. It's an apartment, I didn't pick it.

I mainly use my Rosewill (Newegg) induction hotplate.

Kitchen Aid Meat Grinder -- Gray Ooze

I said it was an older model, NOT a used one. It was brand new. I had cleaned both of them thoroughly and used both of them several times. The newer model kept producing dust, the older one did not.

Not all metals have the same hardness. Not all metals are hard enough that it requires a large amount of effort (by a machine or otherwise) to produce shavings.

Just turning on the mixer with the newer grinder installed would cause visible amounts of metal filings to collect at the center hole (where the grind worm inserts into the grind plate).

You're wrong. It is dust. I don't know what types of metal the pieces of the modern grinders are made from, but it's soft enough to produce fine dust/shavings when you run it without any food. I saw it build up myself. I could take it apart and tap the pieces onto a white sheet of paper and see all the metal dust. It's real, and it's disgusting. That's why I returned the POS.

Now compare that to an older grinder I found (wooden pusher, large hole plate has REALLY large holes) which does not produce the dust. The metal the blade is made from is completely different; totally different color and weight. The other pieces are probably different as well, although appearance-wise it's hard to tell.

It has nothing to do with using it correctly or not, it has everything to do with KitchenAid continually cheapening the build quality of this accessory over the years.

I don't see the big deal about NSF certs either. It has to do with sanitation and safety, not quality or durability of the item.

For me, it's not that it's selling cookware, it's that it's obviously cheap crap. Some of us have some integrity. I wouldn't put my name on cheap Chinese cookware and furniture like, e.g. Martha Stewart does. Her stuff includes shattering patio tables, chairs that slice people's fingers off, and casserole dishes that send enamel pieces flying about.

Weird, I thought for sure I saw Martha Stewart crap the last time I was in there. Apparently they parted ways in January 2010. She was definitely with both Kmart and Macy's at the same time for a while, though.

I haven't seen the commercials, but I saw the line-up in the weekly ad. For somebody with such high standards, I don't know what he's doing with Kmart. The stuff is almost certainly junk.

As for Martha, AFAIK she's been with Macy's and Kmart simultaneously for a while now. They're two separate markets anyway.

Cake pans and stand mixers

Kitchenaid just came out with a new 7 qt model. Keep in mind, though, certain bowl-lift accessories won't work with it (ice cream maker, smaller bowl, scraping blade). The next step down is the 6 qt. 600/610/620 models. 610 has slightly more power, 620 has nicer casing (and I believe it now has the increased power of the 610 as well), they're both still exclusive to W-S as far as I know.

I haven't been in a W-S store lately, but the 40th anniversary stuff was in the last catalog, and is on the web site as well. It mentions the new handles, etc.

I've been wanting that glass bowl as well - unfortunately I have a 6 qt. bowl-lift model, so that's not gonna happen.

On the other hand, I was in Bed Bath & Beyond the other day and saw the silicone scraping blade for the 5/6 qt. bowl-lift models. I couldn't believe it - I didn't think they were going to make one for us, since I hadn't heard anything about it and the tilt-head one had been out for a while. Anyway, I bought it, of course. It actually works really well. One of my favorite KA accessories.

Replacing a CuisinArt Food processor (Dualit XL1500 main contender) Robot Coupe option?

I have the Magimix 5200XL, which appears to be sold in the UK as well (it's on Amazon.co.uk). It's pretty easy to clean. It comes with this "BlenderMix" thing... it's like a ring that sets inside the bowl, and it has fins... I'm not sure it would accomplish what you're looking for, scraping-wise, but take a look anyway. It also has an egg whisking attachment, but it's nothing like the e-disc. It's more blade-like.

Huh, I didn't even know there was another set. The cups look the same as the W-S ones (like mini-saucepans) but the spoons are bowl-shaped instead of being squared off. Interesting.

Emerilware's not the only thing made in China. I got a set of measuring spoons and cups from W-S that look like miniature All-Clad pans - made in China. They're still nice, though.
