Cheese soup failure
I did not make a roux. can someone please explain the chemical process of stablizing? I am very curious to know how the roux would help.

Cheese soup failure
I have made cheese soup before, but something went wrong when I made it tonight. I eneded up with a watery broth filled of goopy cheese that never made it into that delicious creamy consistency. Any thoughts?I used 2 cheeses, a cheddar and a Gouda *low fat*. Is it because I had too much heat when I added the cheese?
Suggestions would be great.
