Anyone Ever Try Par-Baking Popovers? (Can it be done?)

That is what I thought ... so I can't take Chefjimjam's advice and put the lamb back in with 10mins to go on the popovers. (He seeme to be a professional and may know a trick that I don't - but I don't want to risk it)

I guess reheating is my only option

That is a good idea - but I would be more afraid of over cooking the lamb. I guess if you are only talking 10 mins it really wouldn't raise the temp. ... Is it ok to open the oven door with the popovers?

I suspected as much, but wasn't sure.

What about taking them out 5 mins early (like I asked in my original post) and then popping them back in? I think that might work ...

Anyone Ever Try Par-Baking Popovers? (Can it be done?)

Trying to juggle food times and temperatures is HARD!

I will be making a 2lb boneless leg of lamb. That will take less than an hour plus no more than 20 mins. to rest.

I want to serve Popovers with this meal. But popovers take 40mins with the first 20mins at 400! I can't cook it with the lamb and there is no time to bake them when the lamb comes out.

Could I cook them for 20 mins (at 400) and then take them out of the oven and then put them back in when the lamb comes out? ... What if I just take 5 mins off the total time and then just pop them back in for 5 mins to "reheat" .... etc. etc.

Would any of those ideas work?

NEED HELP! 2lb boneless leg of lamb

Family of 3 ... wanted a leg of lamb. Thought 2lbs would be the right size for us. The problem is, it has been ages since I cooked a lamb roast (usually just do chops) especially one so small. I have no idea how to cook it. We want it medium rare.

Since it is so small, does that mean it will be done in less than an hour?

Where should I get my shwarma fix in Vancouver

I'll be back in Vancouver on Monday. I've missed it so much!! I've got my favorite places (Go Fish, the Stockpot, Octopus Garden, New Town Bakery for pork buns etc etc)

I have yet to try shwarma in Vancouver (who knows why) I am craving some as I here there are so great places ... but where should I go? Is Babylon Cafe still every one's favorite?

Opinion: Best Sushi In Vancouver List..

I am so glad to see Octopus Garden on the list - but I do realize this thread is nearly a year old - I had the best Omakase experience a few years back at the OG and I was wondering if it was still just as good. I will be visiting Vancouver again in late August and I definitely want to do a sushi ... should I go back to OG or try a new place?

Where Does Trader Joe's Food Come From?

This is the STUPIDEST article I ever read. I have read many a TJ newsletter and frequent their website. They never claimed they "made" the products. Far from it! They always talk about how they search the world over to find the best products and by putting their name on it it saves you money. I have known that FOREVER!! (Sometimes when I shop in a regular store I will spot something that looks a lot like a TJ item and I will wonder if it is the same. It is kind of a game I play)

What I love about TJ is that their tasting team is awesome. They choose really good products. I know if TJ has their name on it 9/10 I will love it.

Lasagna with FRESH Mozzarella?

I have never used fresh mozzarella with lasagna before, but I bought a really delicious double pack at Costco and thought I should actually do something with it besides stuffing the whole thing in my mouth :-D

Here is my question, if I use this mozzarella, should I omit the ricotta? They both taste so similar. Or should I just heavily season the ricotta?

Need help - 1 1/2 day in Bend

Hi All,

My friends and I are taking a day trip (will spend 1 night) to Bend next Tuesday. They have been before but I have not. I am the chowhound of the group though, so they put me in charge in finding places to eat. (They said the last time they were there they ate at Red Robbin! LoL That won't happen while I am there!)

It will be me, my best friend and her husband. He is "blue collar" - not that there is anything wrong with that(!) -I just don't want to overwhelm him with a place that is too "fancy" or food that is to "innovative" ... you know what I mean. We are also on a budget.

So give me your best recommendations for great casual restaurants! Also, what do you think of Baldy's?

Both Savor Seattle ( and The Chocolate Box (108 Pine Street have "Chocolate Tours" I have been on both and it was totally worth it!

For gelato, my ultimate favorite place is Gelatiamo. It is some of the BEST Gelato I have ever had (anywhere.) 1400 3rd Avenue

You didn't ask, but you HAVE TO try 2 places while in Seattle:

1. Salumi (owned and operated by the proud parents and family of one Iron Chef, Mario) and one of THE BEST sandwiches you will ever eat ... only open Tues-Fri 11-4 COME EARLY!

Kappo closed until Summer - now what?

I don't live in Seattle, but I am now a regular (I visit every few months) I have never tried sushi in Seattle , but that is on the top of my list for my next visit. I had my heart set on Omakase at Kappo.

I just heard that it is closed and will be relocating somewhere in Eastlake in the Summer.

Is there a good alternative ... I don't want to wait until Summer! I will be visiting next month.

The best Omakase I ever had was in Vancouver at a place called Octopus Garden. I opted for the $100 dinner and it was worth every single penny. I was stuffed to the gills and was able to try so many different things.

I want another experience like that.

Where should I go?

Well, I wouldn't consider Moroccan "middle eastern" since it is in Africa! ;-) (I don't like the fact that you just assume that I am ignorant)

Best Fish and Chips in Victoria , Vancouver and Seattle

OMG YESSS! Red Fish/Blue Fish in Victoria and their Sister shack, Go Fish in Vancouver!!

I have been to Vancouver several times and I can honestly say I am addicted to Go Fish. Yes, the fish and chips are REALLY GOOD ... but if you don't have a fish taco or a scallop sandwich, you haven't lived!!

Unfortunately, there is nothing like it in Seattle :-(

Middle Eastern Lentil Soup ... what is that I am tasting?

Went to a new Middle Eastern restaurant (Alibaba's) and ordered a lentil soup. It was fantastic! Best lentil soup I ever had ... but different than I have ever had.

I want to make it at home - but I can't seem to find a recipe. I mean, there are several recipes online, but it seems the only seasonings listed are salt, pepper and cumin (sometimes turmeric)

There is got to be more than that in this soup. It tastes "flowery" and I can't place it. Saffron? Cinnamon? I am sure there is cumin in it and probably turmeric too. (as the take out styrofoam cup is stained with that yellow color distinctive of turmeric ... or saffron I guess.)

Good grief! I might just have to ask them.

Any ideas?

Seattle meets the NYT, take two

I am so sorry that your food was confiscated! :-( I tried to bring a tub of Trader Joe's hummus on a plane and that was a no-no too. (I knew about liquid etc ... I didn't think hummus counted - but it is a "gel" according to them) I gave them my best cute - bewildered face and they scanned it with their magic wand and let me take it.)

Now I always pack a small insulated bag with gel bags that will easily fit in my check ins.

Chicken Stock for Beef Stew?

I haven't made a beef stew in awhile and have been looking online for some ideas. I have never heard of using chicken stock but have seen it listed in a few different recipes.

Has anyone ever tried this?

And while we are talking stew, any good recipes? (I like to take a few and then make up my own)

Are all chicken sandwiches at fast food restaurants loaded with sodium?

I went through this same thing with my Dad who was addicted to eating out. He thought that just because he couldn't taste the salt, it wasn't there. (Then he would get mad at me if a put in a teeny tiny little bit of sea salt while cooking his eggs or mashed potatoes! HA!!)
Unfortunately, fast food AND most restaurants (Applebees, Chili's and Ruby Tuesday rated among the worst) put an insane amount of salt in their food. If you can taste it, then it is REALLY BAD.
You are right about your Mom. Let her eat what she wants!! ... As for you, if you are really concerned, you should buy one of those books that tell you the nutritional value of foods and contain several restaurants and prepackaged foods.

Oh, forget to answer your specific question. As far as fast food goes, the grilled chicken at Chic-fil-a isn't that bad.

Want to make Indian/Pakistani Cookies - any great recipe? (Had one from a blog and lost it!)

I was saving this blog entry that I had found for some time. In the blog this girl was at a bazaar/fair/festival (can't remember at all!) and she was helping her mom sell her cookies. The girl and her Mom were Indian or Pakistani (can't remember that either) and she gave a recipe for these cookies that had pistachios all over the top of them. They probably had saffron in them too because I am pretty sure I was searching for Indian cookies with Saffron (because I was trying to find out what to do with mine.)

Anyway, I had this saved for a long time and I went to print out the recipe last night and it is completely gone from my computer! I am seeing flashes in my mind of deleting this website (when I was trying to clean up my favorites a few months ago) because it was a dead link but I don't know if that is true or not. I have been searching for it for hours - but I can't find it.

So I just have to let it go. I have a OCD about losing things ... I just can't stand it. But I have to just let it go ... sigh

I still want to make some cookies though. I LOVE Indian food. (LOVE IT!) I just really want to make a cookie. (I think it is just that time of year)

Anyone have a good recipe for me?

I just don't want almond (I have been making LOTS of Italian pignoli cookies and I am almost - almost- tired of almond (!) ... but anything else is fine. And I do have pistachios and saffron. :-)
