Burnt ends etc.
Burnt ends are the point of a brisket that is removed and put back in the smoker for several more hours. This is then diced up and added to sauce and sometimes simmered in the barbecue sauce for a little while.
Not rib tips as those are pork. I've never heard of "tips and ends".

I like mayo on BLT's and as a dip for fries. That's about all I use it for. Hate miracle whip, way too sweet.

Dried Beans - What's is the trick?
Definitely, fresh beans are the answer. I've started ordering mine from Rancho Gordo. Really, really good beans.
Deviled Eggs - Pasta or what?
I thought the "deviled" referred to mustard.
But I have to agree with ChiliDude, there should be some habanero in there somewhere.
Garlic powder & onion powder vs garlic & onion
I use both fresh and dried onion/garlic. Sometimes in the same dish. One is not a substitute for the other, however.
Gumbo for example, I use both fresh onion and garlic, I also use a spice blend that contains dried onion and garlic.

Gates is not my favorite. I like the sauce and their fries are consistently excellent, but the barbecue doesn't measure up.
Check out Brobecks when they're open. I they have the best ribs in KC. Burnt ends are very good as well.
LC's burnt ends are the best of the best barbecue in KC.
OK Joe's is excellent as well.
The original Bryant's on Brooklyn is a must hit as well. Avoid the other locations.
I'm not a fan of Haywards.
Best Fries in the U.S.
In Kansas City, Gates and Son's Barbecue.
Their barbecue is not the best in KC but the steak fries are super crispy and always fresh. Usually too hot to eat right away.

We moved from KC to Lexington KY about two years ago but I always enjoyed Momma's on 39th. I hope they're still open.
My breakfast places were out in the burbs. Mom's Kitchen and Old 56 Family Restaurant in Olathe. Old school greasy spoons.
I was in KC last weekend, Mom's is as good as ever, but may be too far from where you're staying.

Are you a dessert person or not ?
Not a dessert person. I have an anti-sweet tooth. I'm usually forced to eat cake and ice cream on my kids' birthdays. That's enough for me.
I much prefer a cheese plate.
Help: making a roux
I mistakenly used self rising flour for a dark roux once. It worked, but I wouldn't recommend it. It kept trying to rise while is was browning. It was a lot of fun to watch. I think the leavening eventually cooked out and it came out fine.
Don't try this at home kids.

You can use lard or any other fat for roux. I would not use corn flour. Use AP.
If you're making a cheese sauce, do not add the cheese directly to the the roux. Add hot milk and bring to a boil while stirring. Once it boils it will thicken. Then you can add the cheese.
Best advice for a novice smoker?
I wholeheartedly agree with this. Seems once a cover is put on top of meat being cooked over mesquite, the food develops a bitter flavor. I don't care for it as a smoking wood. Seems OK to use for steaks or burgers, but its still not my first choice.

where to get coffee (and what brand) if you're on a budget?
I saw that at our local Fresh Market. I was wondering how much actual Kona is in that. $1/oz doesn't quite cover the cost.

Mine was used previously for popping corn. I think they're about $15 bucks for a new one. Someone pointed out to me that the hot air should enter the chamber through the sides and not from the bottom. I have no idea if this is true, but mine does have the vents on the side.

I had one that was collecting dust. Sweet Maria's website has a lot of information on home roasting, including the popcorn popper. Took me a couple of tries, less than a 1/2 pound to get it right. It isn't that hard.
Make sure you do this outside as the chaff can create a little bit of a mess and it does smoke some. The smell can be a bit thick too. I roast in the garage during the winter and then air it out and sweep it afterwords.
I removed the top thingie and just went with an open popper.
Add beans to the "Max" line
Turn it on and shake so the beans at the bottom get moved to the top.
The beans will start to get pale, then go to yellow, then start to brown.
A lot of chaff starts coming off at this stage.
You will then get the 1st crack, it sounds a lot like popcorn popping.
At this point the beans loose a lot of density and you don't need to shake as much.
The beans will then go into a 2nd crack, it sound more like a snap. Much less intense than the 1st crack.
At this point I pour them out into a mixing bowl and shake to cool.
That's it. Pretty easy.

I roast my own in a popcorn popper. I pay about $6/lb from Sweet Maria's. Great coffee and it doesn't get any fresher.

Option 1. Loin is too lean and lacks the connective tissue to make pulled pork.

I marinate for a few hours in:
White wine
Lemon Juice
Rosemary
Olive Oil
Onion
Garlic
S&P
Dry and smoke over hardwood charcoal and grape vines @ 250F for a few hours until tender.

Woodyard is great. I've eaten out on the porch many times. Hopefully, the weather is nice and you can sit outside. Next to the woodyard.
I've never eaten at Wabash so I can't speak to that.
You should consider hitting Bryant's as well. They are the grandaddy. The brisket and burnt ends are very good.

If you buy a smoker, get a deep fat fryer too.
A buddy and I were cooking these at the American Royal a few years ago. He brought his turkey fryer because he wanted to do fried pickles. Of course, everything went in. After more than a few beers everything can and will be fried. After we took these these things off the smoker, they went into the beer batter and into the fryer. Unbelievably good, and my heart survived.

Halve lengthwise, scoop out the inerds, stuff with cream cheese and a little smokie. Wrap in a half slice of bacon and secure with a tooth pick. Put 'em on the smoker @ 250F for a couple of hours.
No need to precook the chile.
