No-Knead Bread vs Traditional (Kneaded) -- How are they Different?
I've been baking with the 5-minute book for a few months now, and I really enjoy the results.
My one discovery is that wetter = better. I add ~25% more water than their base recipe calls for. I've found that this allows for fluffier loaves on the bread I bake right away, and keeps things nice and moist as I pull off loaves during the next couple weeks. If you want to carefully shape loaves the wetter dough can hinder this effort, but the taste / consistency payoff is worth it for me.
I also was disappointed when I tried to keep the dough in an unsealed container, so like karykat I just started using a sealed plastic containe, and that works wonderfully. The dough does turn more sourdough'ish during the 2nd week of its life, but I I enjoy this.
I definitely recommend doing some kind of steaming when you put your loaf in the oven. I just have a cast iron pan that sits on the rack below my baking stone. Right after I place the loaf on the rack, I pour a cup or so of water into the pan (careful, the steam can scald) and quickly shut the oven door.
My Global Just Cracked - Is This Typical? Also, post errors?
Thanks so much for the insight. Global's parent company directed me to their US distributor, Sointu. Their warranty specifies that they don't cover chipped tips, but hopefully a crack in the middle of the knife will be covered.
Can't Post - Greeted With Errors
I've been trying to post in the "Cookware" forum, but after trying 3 times, I'm beginning to think it's not just me.
I posted 3 duplicate posts, and each time when I hit post I was greeted with an error message from Chowhound:
"There's been a slight problem...

Note: Sorry if I'm posting repetative posts - every time I hit "Post", I get an error page. This is my 3rd try.
I've been in the tank for Global knives ever since I held my first about 5 years ago. But, about an hour ago, I dropped my 5.5" Vegetable knife about 2' onto the linoleum and it cracked at the handle, nearly into two pieces.
So, two questions:
1) While the manufacturer's site mentions that they don't cover dropped knives in their warranty, has anyone else had luck getting a replacement in a similar situation?
2) Is this a common occurrence? I mean, high-end (well, sort of high-end) knives cracking with light impacts?
