I agree overall but Breakfast of Course on Trade Street is an exception to this rule. Try the Breakfast Burrito. I've also heard good things about the Screaming Rooster in the old Mary's of Course location and plan to try it soon.

Agreed. If possible skip both, especially McCall's, and hit Grady's instead.

I'm with you. I've baked a couple over the years. Plain with no special preparation. I still prefer it sliced 1/4 inch and fried over low heat to just warm it through. My mother thought country ham should be soaked in plain water, overnight changing the water a couple of times to make it less salty. Honestly I could never taste the difference.

If you know your butcher you ca ask for ham gravy slices. In other words don't trim the fat. I have used a little lard to supplement lean slices. Never tried butter.

Breaking news from The Greenville, NC Daily Reflector:
For the first time, Ayden’s hallowed Skylight Inn barbecue joint is expanding its menu — to include barbecued chicken on Thursdays and Fridays only.
“It’s cooked with wood, just like our barbecue,” said Samuel Jones, grandson of the late Skylight Inn founder Pete Jones. “We make our own special chicken sauce.”
A combination plate with barbecue and chicken is $8.75. A plate with a quarter of a chicken is $6.50. Plates are served with cole slaw and corn bread.
Patrons may also buy just a barbecued chicken. Prices are $8.75 for a whole chicken and $4.50 for half a chicken.

The bbq I saw there looks more like mince meat and is an odd, almost chocolate color. I assume it is machine ground after cooking from the looks of it. The guy next to me liked it though. He ordered one, finished it, then ordered another. I'll stick with the dogs.
Pulliam's will remain near the top of my list. Number 1 on my list might be Bill's in Washington, NC but Pulliam's is so close it might as well be a toss-up. Both are very different products from each other but are uniquely great and both are red.

I visited J.S. Pulliman BBQ today, not for the barbecue, but for what I consider the best hot dog in Winston-Salem and one of the top two best hot dogs in the entire state of North Carolina. Pulliam's is located on 4538 Old Walkertown Road just a few doors down from the, now defunct, Bell Brothers Cafeteria. I didn't realize it until today but there is an old photo hanging inside that says J.S Pulliam began operating in 1910. Now in its centennial year, the hot dogs are simply outstanding. Served on a buttery toasted bun, an "all the way" is mustard, chili, onion, and cole slaw. To enhance the experience I recommend adding a stream of the house BBQ sauce called Big Ed's. It comes in two variations, Mildly Hot and my favorite, Extremely Hot. Extremely hot means exactly what it says. I find a thin steam of the extremely hot added along the top of the dog to be a perfect addition. Sweet, savory with some mouth filling heat that takes a few seconds to fully bloom but pleasantly lingers for a good while. Yes! Big Ed's sauce is for sale for $2.50 a bottle here. Don't leave without a bottle or two. One of each is my routine. A variety of beverages are sold out of those old fashioned, chest type, machines. You know. Those machines that are probably older than your granddaddy. My beverage choice today was a old style bottle of NuGrape soda. A classic combination with the dog. B&G Fruit Pies are available for dessert.
A word for the uninitiated. The hot dogs are those red ones. "Gourmet" tubes not necessary. There are no seats here. You belly up to the small stainless steel bar and eat them standing or you can take them outside and sit down and eat them on the tree stumps out back. I'm not kidding. Another option is to use you car as a table. I just prefer to squeeze in between other patrons and eat them inside so I can re-add the hot sauce if necessary. Don't be shy, just squeeze in. No fries are offered on the short menu. No website, Facebook, or Twitter. The phone number is 336-767-2211. Hours are 10AM - 5:30PM, Tuesday-Saturday. Be sure to view some of the old vintage racing photos while there. The staff will be tickled to tell you all about them and the history of the place. The clientele will often range from corporate types to working stiffs all on equal footing and with a common purpose of dining on one of the best hot dogs served anywhere.
This is one of those places where you really should eat in the restaurant to get the full experience.I never do takeout at Pulliam's. Service is quick and polite. Don't be intimidated by the spartan appearance. The hot dogs are the main attraction. Places like this stay in business for 100 years for a very good reason. Just some of the nicest people you'll ever meet. I have never tried the BBQ so I can't comment.
Big Green Egg Grill
I've had one two weeks. There is a learning curve to using it properly. Only one complaint so far is that I fried the gasket the second time I used it trying to cook some rib eyes. The manual and accompanying CD advise "burping" (cracking the lid slowly/slightly a couple of times) the grill at high heat due to the potential of flashback from an oxygen deprived fire thereby suddenly introducing oxygen to the fire bed. I did burp it but not enough. The superheated flashback snaked over the gasket and melted it in one2 " spot. Now that area seeps smoke. Replacing gaskets (one on top lid and other on the bottom base is not a job you want to do often. There are a number of You Tube videos that demonstrate proper gasket replacement. That said I smoked ribs at 200 to 220 F for 6 hours this past weekend with spectacular results. I also grilled a pizza on a baking stone 550 degrees F and the results were on par with a wood fired pizza grill. Use Hardwood lump charcoal only. Snuff the fire out and you can easily reuse the charcoal 2 or 3 times without adding more. Once I get the hang of it I'm sure I 'll be a total convert. The gasket leak seems to effect high temperature cooking moreso than low temperature smoking or roasting. BGE accessories are not cheap but are good quality.
NC BBQ recommendations...
I was at Skylight Inn (Pete Jones) today. A sign on the door announced BBQ chicken starting Sept. 1, 2010. Thursdays & Saturday or Thursday through Saturdays I can't recall which. All I know is BBQ chicken will be added to the menu for a limited number of days per week.

I've heard several others laud McCall's but apparently I can not catch them at the right time. Based on my experience there I'd give them a middling grade. Kind of in the Parker's and Bill's category. Not bad but not great

One more point. I've had mixed results at Wilburs. Sometimes great, sometimes average. Rather than Wilbur's if you don't want to drive to Ayden, justdrive 10 minutes south and hit Grady's in Dudley.

I prefer Skylight over B's as well unless it has to be takeout. The skin is crispy in the restaurant but Skylight seems to get soggy in a takeout situation especially if it sits in the container for 30-60 minutes or more. If its got to be takeout I usually go with B's. Just my opinion.
Who has best hotdog in NC?
I vote for Bill's in Washington. A unique meatless chili and the hot dogs are red and deep fried. I love the hot dogs at Pulliam's and Skippy's in Winston-Salem. Both are excellent and not trying to diminish them but Bill's are the best I've ever had anywhere.

No gripe on the BBQ or other suggestions. I'll add two other suggestions; Mozell's at 878 West Fourth Street and Bernardins at Zevely House which is across the street. On my last visit to B's on April 17th I came up empty on barbecue at noon. This past Saturday I was back and first in line at 9 AM for some takeout for my parents. I had a small amount right out of the container then and there. Breakfast at B's. My parents live in Kinston so on the way I stopped by Ayden and ate a small tray for lunch at the Skylight Inn. Holy. Saturday night at a wedding reception back in Greenville there were barbecue sandwiches from B's offered along with sushi, shrimp & grits, roast beef, coconut shrimp, shrimp wrapped in bacon etc.I had to maintain the theme and split a barbecue sandwich with my wife.
A definite Q fix was had Saturday. I still give a slight but close edge to Skylight Inn's offerings. The rest of my family consistently gives the nod to B's. Both are worthy contenders and should be included on any eastern NC BBQ hunt. The next time I'm down east Blackbeard's is on my radar. Haven't tried it yet.

I stopped by B's Saturday April 17th at 12:05PM and they were already sold out of BBQ. Bummer. Apparently ECU was having its Spring football game and neither B's nor I took that into account. Had some good BBQ chicken there which was almost sold out as well. I'll try again next time.
