Where can I get the best ramen in NYC?
I like Menchanko Tei located at 43-45 W. 55th (between 5th and 6th). They also have great dumplings.
Driving the 401 - Toronto to Montreal
The Fish & Chips in Napanee (I think exit 579A off the 401) would be a good stop. The halibut is great--and so is the Greek salad. For a healthy meal, the Greek Salad with grilled chicken is the way to go--then for a treat, try the butter tart--it's made by one of the waitresses and it's excellent..
Fry pan with only one tbsp oil?
It's the Tefal Actifry-- There's another posting of the item: http://chowhound.chow.com/topics/667239 Apparently, it's $350 and it takes 40 minutes to do that batch of fries.
How to make my stove burner smaller
Haven't used them but maybe a "flamer tamer" or "heat diffuser" would help? There's several different types on Amazon and I've seen them at some stores.
Replacing Old Cookware--Recommendations Needed!
The Cuisinart Multclad IS induction-capable according to the description on the box.. Maybe the older model wasn't induction-capable but the ones I bought last winter all state that they are.
Building a set
Sorry about that--I tried to remove the link but couldn't find an edit function here--obviously, please refrain from going to the link--don't know if it's my computer or the website.
Building a set
Cooks Illustrated did an article on the "Ideal Cookware Set, a la carte" (May 2009) which recommeneded a 2 and 4 qt All Clad saucepans. CI recommended the Tramontina tri-ply clad that's available at Walmart.
Fine Cooking magazine selected a Cuisinox Elite 4 qt. saucepan http://www.cuisinox.com/pdf/en/Fine_Cooking_magazine_article.pdf Cuisinox Elite is tri-ply clad and is made in Quebec, Canada. The 4 qt has a helper handle and it looks like it's made well--$79 on http://best-cookware-set.com/
I bought Cuisinart's Multiclad Pro on Amazon at very good prices--it's a a great tri-ply clad product made in China) and I like it but the Cuisinox Elite looks like it's made better. I use mostly the 1-1/2 qt and 3 qt saucepans. The 4 quart Cuisinart Multiclad doesn't have a helper handle so I find it a bit too heavy to use (which is why I'm looking at the Cuisinox Elite).
The Calphalon tri-ply clad gets good reviews on Amazon (comes with glass lids)--I've seen some pieces lately at Marshalls/Home Goods and TJ Maxx. If you're looking for very high end, there's also Demeyere (made in Belgium) thats available on knifemerchant..com and at zabars.com. Zabars also has some good prices on Marcus Samuelson's line made by Waring (USA) which is heavy-duty--as well as Spring Cookware (I think Swiss-made).
Demeyere Atlantis stuff looks great
Zabar's in NYC is another place that carries Demeyer. Check online for some of the pieces they carry or if you're in NY, go to the housewares dept. on the second floor--they have a big selection and decent prices.
Where to buy fine dining-style plates (large plate with small bowl center)?
Check out http://www.bridgekitchenware.com/ You can also email them a photo and see if they can help you track it down.
