I wasn't aware that I couldn't place on the list places I like and didn't know about until I moved here. I'll be sure to secure your approval first next time. This is someone who is going to be a freshman so I figured some non-expensive places that have been consistently good would be appreciated. Again I'll try to ask you first before I post my opinions to make sure they're okay.

Yeah....long hours and little sleep don't help the old brain too much, thanks for catching that.

Do not call up your host looking for the beer, you'll just look like a jackass. Consider it a gift to your host. Also if money is really that tight don't bring an expensive six pack, you can find some great wines for less than 10 bucks and then you'll never have to worry about trying to get back the booze you brought to share in the first place. I always consider it good karma to leave a little surprise for the host, it often makes up for not sticking around to do dishes. lol! just kidding. But seriously if they truly are your friends they'll make sure you get it back, or at least hook you up next time you are down an could use a an adult beverage.

How to use a meat thermometer?

Sounds to me like you need to take the reading and not hit bone or the hot sheet pan and let the meat rest. There is a principle in cooking that all line cooks know/learn the hard way called "carry over cooking" in which the meat will continue to cook after it has been removed from the heat because the super heated juices/liquids in the meat will continue to circulate for up to 10 minutes or more AFTER the meat has been removed from the heat source. This is also why you should never, ever, ever, ever cut meat that has not rested, all the juice will run out leaving you with dry and not so pleasant to eat meat.

You should also periodically calibrate your themometer by either submursing it in ice water to get a reading of 32 celsius or place it in boiling water to read 212 celsius. I would recommend doing this at least once a week.

And never, ever, ever, ever leave your themometer in the meat in the oven unless it is specifically designed for such use.

prix Fixe help!!!!!

Usually price fixe is per person...think of it as a set menu for a set price so you get X, Y, and Z. for a set price. Some restaurants will have it for two or more but it is usually very, very clearly posted. If all else fails call them up and ask...or if you are too shy for that just ask at the restaurant. Remember they want your money so they will make sure they help you out in any way that will get you to give up your hard earned money.
