Tramontina 8 piece set made in China not Brazil

The line was slightly redesigned. The Brazil pieces are slightly lighter meaning less SS was used in the production of the pieces. Lids and pots are the same size and interchangeable. The most noticeable difference is the handle design. The Brazil models are larger and hollow. IMHO they are a better design but they should have kept everything the same or started a new line. The weight of the lids might be a slip in quality control on Tramontina's part. Great stuff either way and I noticed no difference in performance.

Help Seasoning De Buyer Mineral Fry Pans

I have All Clad and this pan serves another purpose. Its my non-stick pan. Sear to broiler and easy clean. Start over and just use it to cook bacon and breakfast sausage. After use take some of the drippings and rub all over, underside included. Rinse and rub inside with Kosher salt. After about 2 lbs of bacon you should have a rock hard non stick surface. Done.

The current literature has finally freed us from all of the lies of the last 40 years. I do have a problem with the current literature and carbs like rice and potatoes or anything natural. I've come to my own conclusion that anything natural is fine in unlimited quantities as long as you don't get fat.

Genetics has a major factor in longevity. But yes I agree grass fed is the natural diet and will yield the best milk and butter. I also agree that all of the people that are living today that are over 100 years of age all ate butter and animal fats for the majority if not their entire lives. They were raised before the frankenfoods and oils were invented. The only moderation that needs to be observed is not to get fat. All high fat diets like Atkins and South Beach (both created by cardiologist) show cholesterol levels improving on saturated fat diets. This myth that engineered low fat foods are better has been debunked.

Anything that markets itself as healthy is not. Everything in its natural form is the most healthy. The farther away from its natural form is not. Smart Balance is soybean oil and canola, its crap, sorry to have to tell you.

Sparingly only means don't eat so many calories from butter as to become overweight. It's an all natural product that you can use as much as you'd like just don't get overweight. My grandfather is a thin man that has eaten eggs cooked in bacon fat his entire life. Always butter nothing un-natural and has never used olive oil. He'll be 95 this year and is on no medication. He was pre-diabetic and just cut back on his consumption and that is gone.

Mother nature is never wrong. So you're saying all of mankind throughout history has been unhealthy? Olive oil has probably been around for 3,000 years and only available world wide the last 60 with all of the hydrogenated oils. Many of the oldest living peoples have never had olive oil and only saturated fats. We have been lied to for the last 40 years. It took somebody outside of medicine to debunk this myth. Nobody from the medical community has been able to refute his findings that animal fats good for us. The medical community cannot let go but slowly they must as the evidence i overwhelming.

It's now 2012 and the premise that saturated fat causes heart disease has been debunked fully. You can eat as much butter and saturated fats as you'd like if you do not eat processed carbs and sugars. This is my understanding of this as it is today. Both Atkins and the creator of the South Beach Diet are cardiologists and were able to see the results in their patients. Eating only saturated fats and in high calorie percentages and showing better cholesterol levels. Pharma is controlling the FDA and the food pyramid because they want everybody on statins (high blood pressure meds).

Whole societies have existed getting salts from only the foods they ate. So "trace" amounts of anything are usually picked up elsewhere on a natural diet. Thanks for the link but in this day and age one can link to an article to support just about any argument. Like free range chicken is better. Free range can mean 10 million chickens living in a barn with a 1 sq ft hole in the wall. Since they "have" access to a free range means it can be classified as such. So the link to free range chicken being better was debunked.

Ghee - shelf life?

I guess you should scoop or pour the amount you will use into another container in the fridge. People in climates that have large temperature swings from day and night should be aware of this as well. I'd like to hear from somebody, preferably an Indian, living in a mountainous region of India.

Here in the USA I believe it is mandated that every food product have a expiration date. We know that hard cheeses like cheddar's can go many years longer than the expiration date.

Pemmican, a tribal indian and Inuit food, will last "indefinitely" without refrigeration. It was used by people through out the world before refrigeration. It is about 50/50 rendered saturated fat and dried meat ground into power mixed together. So in my search for why does it not go rancid brought me here.

Fry pans: what's the diff? stainless steel vs. nonstick vs. blue steel

To do what you have listed I would go with a non stick round griddle. That being said you really need /should have an omelette pan. I suggested griddle because you can get the pancakes and crepes much easier. I get the Tramontina non stick pans 2 for $25 at sames. Solid thick alluminum and the rubber handles slip of the steel so they can go in the oven. At $12 they are disposable. I'm on the 2nd one. The 1st lasted 6 years.

I'm with Michele Cindy, if I start top shelf and have just "one" well (cheap stuff) margarita I'll have a bad day the next day. Always top shelf Tequila and Cointreau. I'm sure I could find a cheaper Cointreau substituent and Tequila for that matter. I'm a 3 times a year margarita drinker so I'll stick with what I know.

At a pizza joint? They don't want you, Europeans, Canadians, ever coming back. Next time ask for a pitcher of water and be done with it. To linger and not order anything would be rude.

What is the best set of budget clad cookware? Tramontina? Better Homes & Gardens? Kenmore? Other?

Knowing what I know now here is how I would decide: 1. find a comfortable handle these should last you until you're old so they need to be comfortable for when you get weaker. 2. Make sure its Tri-ply all the way up the sides and not just a disk on the bottom. 3. Most all the Tri-ply are from China and they all have the same technology, Warping is caused by hot pan into cold water. AllClad will warp in these conditions. So they only difference is a rolled lip. MOST important for cleanup and keeping your stove clean.

Suck it up! Do something else like mapping out different running routes on the internet. Reviewing new heart monitors or evaluating new running shoes. Don't screw it up just because you want pasta. It will pass soon enough and you can gorge to your hearts content.

Cleaning burned LeCreuset

Oxiclean it is! I've used a little bleach and that works but don't leave it in the pot for over night. It will remove the shine if you leave it in a long time. Somebody mentioned pressure washer which should work. 3000 psi should get it down to the pot in a flash. Problem is you need to be in your bathing suit.
Btw if you're going to do the bake bread in pot just leave that one for bread baking and let it get brown.

Cleaning cookie sheets

I have the half sheets and I think they are the same gauge as commercial ones. Do standard gauge commercial sheets even fit in a residential oven?
How many did you do at a time? If more than one did you stack them or did you allow air flow between them?
If anybody else tries this check how hot your oven can get aluminium melts at 1220F.

Cleaning cookie sheets

There has got to be an easier way. I don't like Brillo cause it leave deep scratches. I don't like oven cleaner as it damages the surface. So I don't know what to do. Keep watching this post till somebody provides a great solution.

I'm still waiting on the results. I tried the oven cleaner method and it discolors and etches them or makes them "dry" not smooth. Can somebody explain the baking soda method? It's been mentioned many times but I've never heard of it. Also, I tried the Brillo route as well. I don't like the scratches.

"0" Trans fat does not mean its not in there. If its below a certain amount per serving they can put zero. But Trans fat is basically putting plastic into your bloodstream. That's why people on the Adkins diet can eat slabs of bacon and tubs of butter without having cholesterol problems. The body does not know how to process plastic!

Tampa - Hidden Gems?

The only place for NY Corned Beef is "The Lucky Dill" and only at the Palm Harbor store. They do enough business and are able to cook fresh corned beef daily so they are not serving you last weeks reheated garage. I've been to the other stores and sadly they don't compare to Palm Harbor. Also, unbeatable Matzoball soup and again, sadly the other stores don't compare.

Tampa - Hidden Gems?

I'm a HUGE Boars Head fan so sure use their ham but the pork must be roasted Cuban style and the bread must not be old. I have not had any luck finding a solid, meaning every time it will be the same Cuban sandwich. Publix makes them spot on production line quality uniformity but they don't use Cuban roasted pork. Well it doesn't taste like what I'm looking for anyway.
Pipo's on McDill is hit or miss there is no quality control. Sometimes tons of meat other a little. So the bread and cuban roast pork make the sandwich but since they don't dedicate a roast pork for sandwiches its gonna be hit or miss.

A million Cajuns just rolled over in their graves!!! A Jambalaya has the trinity, leaving celery out is like omitting roux from gumbo. It's an abomination!!! Please do not use Cajun or Creole terms with your dishes. Call it "Cajun style chicken and rice with sausage".
