Skirt steak

The skirt is off the plate and sits on the fore quarter, and is the diaphragm. The hanging tender actually sits on the hind quarter and is tagged as kosher with a kosher shecita. It's cut off when the hind quarter is separated from the fore quarter and kept as a kosher cut, similarly to how they handle the liver.

Proper kosher soaking and salting requires that the salt be put on all sides of the meat. Skirts and hanging tenderloin are very thin and a bit more porous than some other cuts, so they absorb more salt.
The ice doesn't help get the salt out but it does keep the meat from spoiling. Just soaking is not enough. Changing the water several times is essential to making this work.

Kosher at Soldier Field seem to be successful. The Bears at Soldier Field, not so successful. Wait till next year.

There is now kosher food available at Soldier Field in Chicago, the home of the Chicago Bears. It's called Kosher at Soldier and they feature yummy meats from Romanian. They are planning on being certified by the cRc. I hope that they are successful.

I admire your devotion to the local vendors but Jewel is far from a local vendor. The more people that support stores like Jewel and Walmart, the quicker our true local stores like Hungarian will close. If that happens those big box stores will have free reign on the Jewish community.

Well said. I was thinking the same thing. I have has many different brands, even some non-glatt brands before the glatt epidemic hit the kosher world, and there is nothing like their processed meat products. One item is better than the next.

Horseradish question

Last year was not a particular good year for horseradish roots. some areas had a very week root so there was nothing you could do to make it stronger unless you added something to it that was very hot.
This year it seems that it is much stronger.
