These were delicious and super easy to make! I will definitely try them another time with buttermilk! I definitely thing this would be great in a biscuits & gravy dish with some sage sausage. Yum! :)

Professional Chocolate Courses

Hi all,
I'm interested in taking some professional level chocolate courses. I've checked ICE and their schedule doesn't work with mine currently. And FCI's course is geared toward amateurs and isn't meant for current professionals. Would anyone here know of other resources in the NY metro area?

Vegan Wedding Cakes?

So I went to the library to get some of the books you suggested! I'm glad they had some of them. I'm curious though, is there any way to make a buttercream similar to an Italian or Swiss meringue buttercream? Many of the recipes have some form of shortening + EB + confectioner's sugar + non-dairy milk. I have tried that before and find it so sweet and gritty, which is why I'm trying to make the meringue style. Would a powdered egg replacer work to make a meringue? Thanks again, Peaches to Poutine!

Thanks so much! I thought without eggs, the cake might not be as sturdy, so that's good to know. Since you are a vegan baker, do you have any particular product recommendations? For example, are there better brands for vegan margarine or are there times when it's better to use almond milk vs soy milk or coconut milk?

Hi all,
I'm currently an avid baker and cake decorator, however I've been noticing an increase in requests for dairy-free & egg-free cakes. Does anyone have any good resources (books or websites) for really delicious vegan wedding cakes that are still sturdy enough to have a filling and be tiered?

Im thinking for this type of cake, a fruit filling is best. Or I can try my hand at a non-dairy ganache. Has anyone had success making ganache with a non-dairy milk? like almond milk for example?

Also, are there any ways to make really rich and delicious vegan "buttercream"? I usually make a Swiss Meringue Buttercream. Is there any vegan frosting that would be light and rich like a meringue buttercream, but not too sweet? I'd really appreciate any input! Thanks!

Suggestions for first visit to SF

Hi all,
My husband and I are going to be in SF soon and I was looking for any good restaurant recommendations in the area. We'll be staying at the Wyndham. He has a conference there and I'll be on my own most days but we'll be together for the evenings. Ideally, anything in the hotel area would be great, but I'd be willing to use public transportation to get around. Also, any great bakery recommendations would be great!

What to do with 7lb leg of lamb?

Hi all,
My husband recently got a 7lb leg of lamb at our local farmer's market. I'm sure I can roast it and make many meals from that, but I can only think of one or two things. It's only the two of us, so I was looking for any suggestions for meals that I can make using the lamb and then store in the freezer for later this winter.

Hi all,
I'm starting to make my own home made sausage. I've successfully made my own italian sausage and bratwurst. I'd like to try to make longaniza. Does anyone have any good recipes or resources to make this sausage? Or any resources on making good homemade chorizo? I'd appreciate any help!
