Green Enchilada Sauce Two Ways

I love the flavor of tomatillos, but in NY supermarkets they are crazy expensive, and you need a lot to make certain sauces. I ended up using canned fire roasted green chiles as a substitute, not knowing this was just a different type of green enchilada sauce! I combined mine with some sour cream and had a really silky delicious sauce.

Roasted Spaghetti Squash

so funny--I literally have a post about a cacio e pepe pasta I made with shredded squash! Such a good idea though to use spaghetti--my hand hurt from all the grating of regular squash! But what a combo with the pecorino and pepper!

Mushroom and Chile Tacos

This is such a good option for serving veggie-carnivore crowds! I love the idea of the mushrooms, and you can easily grill up some flank steak as a separate filling for meat eaters. For this, I love carne asada.

Also, a great side-by-side mexican feast is Chard Enchiladas and Chicken Enchiladas.

Stovetop Macaroni and Cheese

I love using my skillet for Mac n Cheese. I still bake it off at the end, but there is something so rustic and wonderful about setting the whole pan down at the table and having people dig in. Of course, if it is just you in front of the tv, even more reason to eat straight from the pan! Here is my skillet version:

Roasted Rosemary Walnuts

mmm rosemary roasted nuts are the best!! I usually use pecans and add cumin and cayenne for heat and then add them on top of my string beans with cider vinaigrette. A killer combo for the holidays!

Sweet Potato Home-y Fries

yum! I love combining sweet potatoes and regular potatoes to cut down on the sweetness. Love the idea of adding scallions. But another good way to give your hash browns a punch of green is by adding spinach or chard instead of an herb. It really makes for a more healthy version, especially if you have trouble not eating the whole skillet-sized portion like I do!

Spiced Nuts They'll Gobble Up

I love making Sweet/Spicy Rosemary Pecans--just toss them with oil, plenty of rosemary, sugar, cayenne and a little cumin. Recipe below. They are amazing!

Mulled Hard Pear Cider

This sounds absolutely awesome. To simplify it though, I might just do the same with the pear as I've always done with my spiked cider: just whiskey, cinnamon, and cider. It's so simple and so so good!

I love the combination of sweet butternut squash and pasta with a rich creamy sauce. Such a good idea to add thyme. I made this <a href=" Squash Mac n Cheese</a> the other day and used a sage topping. Perhaps next time I will try thyme!

Dungeness Crab Guacamole with Endive

Yum! I love the combination of avocado and crab. Over the summer I topped these Mashed Avocado and Radish Crostini with a spoonful of simply dressed crab with lemon juice and it was the perfect compliment to the creamy avocado and the crispy radish.

Wilted Greens with Balsamic Fried Eggs

Perfect Olive Oil Fried Eggs are one of my favorite breakfasts to make, but I've never thought to put balsamic on them! The greens look delish, but you should try these Portabello Mushroom Home Fries as they would pair really well with the balsamic.

Savory Onion and Leek Tart

This tart is so beautiful. I absolutely love leeks as a sweet/savory filling. I make leek comfit all the time and mix it with various other veg for empanadas, quiches, crostadas. One of my favorites was a butternut squash and leek comfit quesadilla. I think that filling would work really well here!

Apple Tarts with Apple Ice

This looks so elegant. I'm lactose intolerant and one of the things I miss most is flaky puff pastry and beautiful pie crusts. We've been working on a butterless version if anyone has similar dietary constraints. Next, I must try these beautiful apples on top!

Bulgur with Zucchini and Herbs

This looks absolutely delicious! Could I use quinoa here instead? No offense to bulgar, but I have been in the middle of a bit of a quinoa obsession lately. I recently made <a href=" tabouli</a> and thought that the flavors melded even better with this grain as the base.

Either way, definitely going to try the zucchini salad!
