Bolognese Sauce: How do You Make Yours?
OK - thanks for posting. I just wonder because other chowhounds have posted their versions which suggest to brown the the meat. I'm sure both taste great but in the end, does that extra step of browning really create a noticeable difference?
Bolognese Sauce: How do You Make Yours?
May I ask why do we not want to brown the meat in this situation? Doesn't it create more complex flavors?
Vanilla Beans
I will be using captain morgan spiced rum - bad idea? It's all I have. I have a large strawberry jam jar from costco that I will use for this.
I also have some extract going - I just cut the pods into 1/3's (no splitting) and threw them in with some vodka in a bottle with a cork. That has been seeping for 3.5 months. Btw, do you every strain your extract and rebottle or do you just keep the vanilla remains in the same bottle and replenish with more alcohol and beans and just use that?
Vanilla Beans
ahhhh......gotcha...I was so hoping you would respond HillJ. Thanks a lot!
I have a few beens that ordered more than 6 months ago in a tight ziploc that I want to use with this method because I am worried about them drying out since they are so precious.
Dried Out Vanilla Beans
Hi all,
How do you all store the vanilla goop that is gold after you have extracted it? Thanks so much!
Vanilla Beans
Hey all,
Using this wonderful method, how do you all preserve the paste after it's been extracted from the pod??? Does it last indefinitely in an airtight container?
Thanks a lot.

My wife just made a ton of kimchi and we have lots of leftover juices also....trying to gather some ideas. I am aware of the obvious things - jigae, bokums, etc.

Hi Trish,
The link no longer works - I am dying to see the pictures.....is there an updated link? Thanks so much.
Descaling solution for espresso machines (and coffee makers)
No....just the machine. I have an Essenza (different from the one in the manual you linked to) but virtually same machine and functions.
I don't think the filter is important. In the end, whether you use their solution or the citric acid solution, it's all just liquid going thru the machine, no?
Descaling solution for espresso machines (and coffee makers)
In the instructions, there is a small filter that you put to descale - what is that for? To catch the actual scale???

OMG - I grew up in Calgary!!!! Miss the mountains and chinooks...
Thanks for your advice.

Descaling solution for espresso machines (and coffee makers)
Thanks Pepin.
Btw, Nespresso is not that bad at all! Especially when you pair it with the Aerocinno...
Descaling solution for espresso machines (and coffee makers)
Thanks Rosetown. Did you buy it online?
Descaling solution for espresso machines (and coffee makers)
Thanks Rosetown. I hope there is somebody here who has used the citric acid solution that you proposed. Why do manufacturers say to not use vinegar or anything except their proprietary solution? There shouldn't be any problems right??? I don't see why there would be..

I'm wondering how chowhounders clean out their Nespresso machines?
What are you baking these days? Part III [old]
LauraGrace, this is a wonderful post. Thanks for sharing.
Found a small skillet with a long handle - what is it and safe to use?
Thanks all for your responses. I will start to use my pan. I don't know if I will use it more than my non-stick for eggs and such...

I googled after reading your comment re: Julia.

2:18 - looks similar to my skillet except her pan is a lot more shinier.

Thanks Kaleo. When you say, clean it like a wok, you mean don't use soap like blaireso said right?
Found a small skillet with a long handle - what is it and safe to use?
Thank you for the replies everybody. A magnet does not stick to it.
So should I season this skillet by treating it like a cast iron pan?
I am assuming that the reason it used as a crepe pan is because it conducts heat really fast and has low rims so the crepe can slide off?

We moved into a house in January and found this in the pantry. I have never seen anything like it.
I am wondering if it is safe because it looks like it is aluminum, which I heard is not safe to use (unless it's anodized, whatever that means)
Thank you.
How do you freeze your stock?
Karen, can you elaborate on what you mean by using a tumbler? I can't visualize what you are saying, especially the part about folding the edges of bag over????...=d
