Wedding at Crystal Plaza or Signature Caterers by Roz at The Vanderbilt?

Mazel Tov. I cannot comment on the kosher brought into the Vanderbilt (presuming you mean the Vanderbilt at South Beach, SI) but I went to a non-kosher affair there last summer and the service was EXCELLENT. Attentive and subtle, pleasant, and willing to stretch for a guests' need. I can tell you that I would think that they handle kosher as well as what they've made (realistically, it is all made ahead of time) and everything was served at the correct tmeprature, nicely-plated, plenty of dishware/glassware/utensils on hand at the buffet and at tableside.

I would also suggest you think about commutation in June. The highways between SI and Livingston on a summer Saturday evening and/or Sunday can be daunting.
