How long should I put dough in the frig? The original recipe calls for 10-12 mins bake time, but I baked them for 9 mins cuz I wanted for chewier result.
When you said check after one minute, did you mean I add the bake time to 10 or 11 mins and I check them on 10th minute? Thank you for your advise..

I made oakmeal and raisin cookies this weekend, I baked them for 9 mins at 350 degree, daugh in the center was a little undercooked, they came out chewy, just like I wanted, but they are so soft that break easily. How do I improve so cookies can be chewy but not too soft?

For the curst size, all I have seen is 9", so no need to look for 9.5" cust pie, correct, just adding more filling when I use 9.5 deep pan??

Hi,
I made some banana chocolate chip quick bread this week and the recipes called for 1/2 cup of yogurt. Everybody who tried the bread, loved it. I guess yougurt made the bread super moist. I have been searching for quick bread recipes that originally have either yougurt or sour cream in it, but I haven't find many. I would like to know if I can just simply alter quick bread recipes by adding none fat yougurt or sour cream, by doing so, what other adjustment need to be done at the same time to ensure the result comes out moist? Thank you.
My dirty secret: I don't know how to use the oven's broiler
My electronic oven has a botton on the pannel says Broil, but I really don't know where broiler part is at. The bottom part of the oven is for storage and the oven part I don't see how it can broil food (heat seems come from top and bottom of the oven). So I always avoid making any recipe that calls for broiling. However, I really would like to know is there other alternative to broiler (except for grill) ?

Bread storage?
An issue I see with putting unsliced bread to freeze is if only need some slices instead of a whole loaf, then the whole loaf needs to be thaw, and get few slices and put the rest of loaf back to freezer again. If I keep doing this, freeze and thaw, freeze and thaw, doesn't it damage the bread?

Oil v.s. Butter (or margarine) in baked goods
I did a little bit of search on internet this morning, many suggest grapeseed oil for baking and cooking (not deep frying). Have anybody used grapeseed oil befoe and how do you like it? Is it possible grapesee oil GMO??
Freezing Bananas?
I have some frozen bananas in a glass container and after thawed, I noticed there are lots of water in the container. I have drained out water, but there are more coming out from them. What should I do so it will not affect muffins and/or breads texture?
The recipe origianlly calls for 1/2 cup of vegetable oil and 1/2 cup of plain yogurt. Thanks a lot~~

1) If a baking recipe calls for oil, can it be substitude with melted butter or melted margarine and vise versa?? If so, what will be proper portion, 1:1 or ??
2) What kind of oil is considered a healthies oil for baked goods in terms of non-GMO product and also low fat? Seems olive oil is not recommened for baking due to its strong flavor may change the baked goods.
3) What kind of oil can serve as all-purpose oil to be used in baking, cooking, stir-fry?

I agreed wtih you on buying fresh parsley or cilantro instead of using dried spices, but how about basil, isn't it similar to parsely or cilantro??

1) for garlic, ginger, onion: if COOKING or BAKING recipes call for ground garlic, or ground ginger, or ground onion, can I ALWAYS substitue them with fresh ones??
2) What's difference between Paprika and Sweet paprika? From the names, I suppose one is sweater than the other one? Are these two basic paprika, so I can get either of them to build my spice rack??

I am very new to cooking and new to all kinds of spices. I find them are very interesting. There are a couple of recipes that I am interested in call for Paprika. I went to stores and found out there are a couple different kinds of paprika, what I can remember now is paprika and sweet paprika.
My question is that I don't want to buy all kinds of spices and all different kind of paprika due to budget. So as a beginner of cooking and backing, what are basic spices I should have on hand to start? Thanks a lot!!
