Some Southern New Mexico Musings
desert rat- I like the stacked, red, meat enchiladas with onions and an egg on top. For something lighter, we all like the chicken burrito smothered with thier green chile con queso. The chicken is simmered in spices and is great. Also, on the filling, yet smaller side is a bowl of chile beans ala Chope. he wife and father-in-law get it all the time.
We live about 2-3 minutes from Chope's, so we are there alot.
The mosquitoes have been terrible in this part of the Valley. All the irrigation plus good rain has made for a bad problem. Should be easing up now as irrigation is over for the year.
No idea about the Compass Rose in Alamogordo. Like I said, if I HAVE to eat there, we only go to Eddie's Burritos..
Good Huevos Rancheros in Santa Fe
Haven't been there in a good while, but Tortilla Flats was easily THE place for breakfast, including HR.

I'm sorry you weren't able to come just a bit further south while at Las Cruces. Out here at La Mesa, we have the best mexican food to be had at Chope's, and the best breakfast to be had at Simon's Cafe. You'll find an excellent huevos con chorizo for breakfast at Simon's.
Alamogordo.....sigh. Eddie's Burritos is the only place I'll stop at.
