Rhubarb Muffins with Cardamom Streusel

I hate to be the lone dissenter here, but I didn't really like these muffins. The streusel tasted too salty, and the overall flavor was was kind of like cardboard. I did like the texture though, which I think we mostly due to the greek yogurt.

Lamb Meatballs with Lemon-Cumin Yogurt

Really great recipe. Comes together very quickly. I thought they'd be dry or tough, especially without breadcrumbs or an egg to bind them, but they weren't at all. The yogurt dipping sauce is excellent, too, and shouldn't be skipped. I also got 21 meatballs out of the 1 lb of meat.

Quinoa Chowder with Spinach, Feta, and Scallions

I thought this recipe sounded so strange at first, but I'm really glad I tried it. It's really, really good. I, like the others, would not skimp on the feta. Just dice it pretty small so the flavor is not too overwhelming with each bite. Also, mind the salt, because the cheese will add a good amount of salt. This soup is even better the next day.

Frankies' Meatballs

I made these recently for my birthday dinner (yes, I cooked my own birthday dinner, thank you), and they were a huge hit. My only suggestion would be to roll about 1/4 cup, not 1/2 cup per meatball. Half a cup makes a huge meatball. Also - I baked them on a wire rack placed on top of a sheet pan, so the bottoms wouldn't get too gummy.
