Prather Ranch lard pie crust

Never had it but lard pie crust in general is quite a treat, Joy of Cooking has several outstanding recipes for pie crusts and using lard as the fat.

You can make your own using straight lard but i usually have the best experience going 50/50 lard and butter.
Plus you can purchase lard from Prather Ranch, which ultimately will be the best choice as far as price, and you will be able to make the crust within a couple hours of use.

Looking for panettone molds...

Hi all, I'm planning to make my family some home-made panettone for christmas, and the recipe in Gourmet only tells me where I can get them online or over the phone. Apparently King Arthur Flour offers them. Unfortunately the shipping doubles the cost!
Does anyone know where I might be able to find them in-store?

Hearts and gizzards (mostly gizzards)

Hi everyone,
Tonight at the store I bought a pack of hearts and gizzards (mostly gizzards- that's what the pack says), partly because it was dirt cheap, partly because I like to experiment, and partly because I remember my mom used to make this delicious thing called "giblets and gizzards" that had like a brown, sugary sauce.
Can someone please give me a recipe similar to that, or another easy recipe I can use with these hearts and gizzards mostly gizzards?! :)

No raisins, but I will BBM her and ask what she puts in. As far as I can tell I think there's a little shredded carrot and some onion. Lemme get back to you on that.

What happened to my sauce??

Too big of a temperature difference can cause it to separate or seize up. Next time, add a little bit of your sauce into the half and half, and then add that into the pot of sauce.

Oompa Lumpia!

My wonderful philipino stepmother gave me a ton of frozen lumpia filling. She gave me spring roll wrappers also, but I was wondering if anyone had any other interesting dishes I could use lumpia filling in?
Preferably non-fried dishes? :-)

Are there foods you won't eat because you consider them too dangerous?

I don't drink tap water because I can taste the metals in it. And I was always taught not to because of the pipes.

So I'm on a squash kick....

I ended up cutting the kabocha into inch slices and tossing with olive oil and adding some spices, and roasting for 25 min. added salt afterwards and they were perfect! mashed up some and mixed it into my cheesy polenta too :)

Spices in cooking and baking

Some spices you can also grow for yourself, and it's extremely easy. I grow basil, oregano, and thyme because I do lots of italian savory foods.

I have half a butternut sqash in my fridge (but it's a huge half), and today at the store I bought a kabocha, a delicatta, and a sweet dumpling.

I'm definitely planning to make a pumpkin-bread type squash bread with some of my squash. But I'm pretty stumped on what to do with the kabocha.
I've been browsing online for recipes and they all seem to use ingredients I don't have. Does anyone have any simple suggestions for my kabocha? I'm thinking maybe I could mix it into polenta maybe? Help! Thanks!

Good Mexican restaurant in Napa Valley

Check out Pica Pica which is in Napa, in the Oxbow market. Not quite Mexican but you won't be disappointed. It's venezuelan food. And really great for lunch. And the Oxbow market is super cute to walk around in, it's in a warehouse-type building with other little vendors like there's a butcher that has AMAZING steaks and there's a little shop with kitchen accessories (think cookie cutters and tea towels and candles) and a wine bar type place.
If you do go to Pica Pica, be sure to get their coconut lemonade slushie!! It is so super amazingly good you have to try it.

Cheesy herb-y polenta??

Hi all,
In my knife skills class we get to make dinner every night, and last night a group made polenta squares that were AMAZING, they were cheesy and had herbs in them. My group was doing something else though so I didn't get to watch them make it. Does anyone have a recipe for something like this? It would be greatly appreciated :)

Suggestions for Purple foods?

Trader Joe's sometimes has purple asparagus..
It kinda turns green when you cook it but maybe if you just briefly boil or steam it will retain color!
