Thanks for the response. While I'm sure if one digs deep enough, you can find contradictions in many dishes, I was hoping to find one more that was still being argued over--in the same way there are contemporary contesting opinions on the origins of carbonara and amatriciana.

Female chefs in Tokyo

Hi all,

Does anyone know if there's a recent rise in female chefs in Tokyo. I've heard for years that there's a taboo about female sushi chefs--something about a belief that females having slightly warmer hands doesn't jive with handling sushi. But I'm curious to know if this is changing--not just in sushi but in all types of restaurants in Tokyo.
