wolf combination steam convection oven vs. meile steam oven and meile speed oven
Sorry I don't know but you will find valuable info on Miele/Wolf (&, in fact, all kitchen appliances) at The Garden Web from users. It's an excellent resource. Don't have the addy handy but Google will find it...
Best way to clean glass oven door?
Roasted a chicken last night (delicious!) so this morning the glass door of my oven was speckled with spattered grease. I've never really been satisfied at the results of my morning-after clean-ups. I used Fantastic & then Windex + paper towels and the results are sort of OK but nothing more.
Any tips on best cleaning method? Any particular products?
Paderno of PEI any good?
I love my 35+ year old Paderno purchased from Fred Bridge at his recommendation. Can you buy made-in-Italy Paderno on the web? If so, does anyone have a link? Thanks.
Ultimate Lamb burger
I clipped this from the NYTimes who called it The Four Seasons Chopped Lamb with pine nuts. I've made it for years, it's idiotically simple & delicious.
Add 6 Tbs pine nuts to 1 lb chopped lamb. Add curry powder, coriander, sweet paprika to taste. Blend with 1/3 cup ice water added gradually. (The ice water will lighten the lamb mixture) Shape into 4 portions, chill in fridge for at least 2 hrs to firm & to bring out flavors. Broil for 5 mins on each side or else saute.
I serve with Bulghur (I usually add currants), chutney & raita. It's always a big hit.

What should I know about stainless flatware
An outlet? I wish...
But try ebay + estate sales...
OTOH if you only "think" it's more than want to pay, maybe you could start with 4 settings, then add as you go along. I don't think you'll regret your purchase. I certainly haven't & if my GJ ss should somehow disappear, I'd replace it in a heartbeat & use the "go slow & gradual" approach. It was MUCH cheaper when I bought it so many years ago but those days are gone...
What should I know about stainless flatware
George Jensen makes superb ss flatware. I've had mine for 30 years, use it daily, have never gotten bored with the style & the lasting-quality is unimpeachable. It is expensive but imo completely worth every penny.

Which model Miele dishwasher -- or a Bosch?
I'm on my 2nd MieleDW...the first lasted 20+ years, trouble-free...the second is now several years old, also trouble-free.
I don't know the current models but I would decide which cycles I'd use & then get the model that has those "essentials" with the least amount of extraneous functions that would go unused.
You can't beat Miele quality ... or service (if you ever need it). Seriously, worth every cent.
gel mat
Next time you do floors, consider cork or rubber. Easy on the back/feet, easy to clean, warm in winter, cool in summer. These days, come in many colors & styles.

Special tea to give as a gift?
4th. I've been ordering from Upton for at least a decade & never once been disappointed. I also recommend specialteas.com and harney.com. All of these vendors have appealing gift offerings and all will give excellent advice on the phone.
You might also consider a variation on a wine tasting & give a selection of Assams from different estates (or Darjeelings or Oolongs etc) so your friend can taste & compare. As a tea lover, she might appreciate that opportunity & have a good time tasting & comparing.
Things kids think are "normal" these days...
The orange coating is only the beginning. What about the greasy fingers? And that revolting smell? Blech & double blech!
Hotel Bar in Paris?
I didn't know there were two. I'm referring to the one on rue de l'Université. The twins who once owned it are long gone & with it the hotel's special quality but I was so happy to hear the bar is still going well...
Hotel Bar in Paris?
Is the Lenox bar still so wonderful? We used to stay at the Lenox years ago & enjoyed that bar which had the very chic & casual ambience found only in Paris. Used to see Catherine Deneuve there often.
Also, to OP: the bar at the Plaza Athénée is worth a visit. Very plutocratic.
Things kids think are "normal" these days...
When the daughter (about age 5) of some Major League Foodie friends first went to school, her Dad asked her (naturally because he owns a restaurant & a high end gourmet food store & is obsessed with food) what did they give her for lunch. When asked about dessert, her reply -- this is a kid who basically spent her childhood in 5-star restaurants -- was: "Sorbet, only they called it sherbet..."
Does anyone use a honey dipper?
I use mine almost daily when I make tea for DH & with the same results as thew. In addition, the honey dipper allows the honey to drip off in a way that permits the honey jar to stay much cleaner & avoid the stickiness that makes honey jars unhygienic and unpleasant to touch.
The Perfect Poussin...hints/tips for roasting the little critters?
I've never cooked these but they looked so tempting I bought a pair for DH and I...any input much appreciated.
Cooking pasta with only a small quantity of water?
I recently read a reference to this technique but there were no details about how much water and what kind of pot/pan to use. Does anyone know about this technique? Has anyone tried it?
Where to buy high quality loose leaf black tea?
A shop called Tea & Honey...it's in the Grand Central food hall and there's a new branch on Lexington & 63rd...they have their own teas plus a good selection from labels like Palais des Thés.
Also Alice's Teacup sells quality loose teas. There's one on the UWS and another just off Lexington Avenue in the 60's...might be other branches as well...a search will turn them up
Do you rule out on-line sources? I've purchased from upton tea & specialteas for years and never once been disappointed. They also offers samples for $1-$2, a great way to try different teas.

Best Butter- European or American ? [Moved from The Best board]
Wow! No one's mentioned Beurre d'Isigny until Count00? I couldn't agree more...I get it at Grace's Marketplace in NYC. Heaven is right. So is paradise. Slather it on a baked potato...cold knob of Beurre d'Isigny on hot potato...food simply does not get more sublime.

Whenever I use canned beans/lentils, I rinse them under cold water...removes a lot of salt that way

Sorry if this has been addressed, but a search isn't yielding the info. Where have these pans been reduced? On line or at a b&m shop? Thanks.
Where Can I Buy "Palais Des Thes" Tea in NYC?
You can also find PdT at Tea & Honey's branch at Lexington & 63rd opened just about a month ago.
