Leftover red snapper ideas?
I've enjoyed leftover fish gelatin and all mixed with yellow rice,pimentos and and green olives .A Haitian woman once gave me fish and black rice with onions hot sauce .Pretty ,pretty good it was.
re-heating sliced pastrami?
Steam it. NOT in the water .I use a covered strainer over a pot of simmering water .
What to do with all this carrot puree?
Carrot tahini.....spice to your liking .I add yogurt ,cumin,coriander,zatar but it depends on how I want it to taste or what I find in the fridge or cub bard .
Lamb breast; how to cook it?
Wow lambs breast and head!!!!! As a child Living in Brooklyn N.Y.from a Sicilian family in a neighborhood mostly composed of the same we ate both the breast and the head (capozelli) often .Roasted plenty of oregano and garlic.
Broccoli Rabe - alternatives to sauteing?
I like it bitter ,so I just steam it then add sautéed garlic in EVO cracked pepper and sea salt and I'm good to go .

I had up until 6 yrs ago lived upstate 31/2 hrs from Johns. I often would drive down to visit people and stock up on produce ,fish ,chunk cheese's and various ethnic items. If the weather was cold I'd stop and shop at Fairway ,V&T's in Hempstead or Compare .Once on a whim We stopped downtown NYC ate in Chinatown ,had pastries and coffee (not in Ferrarra's ) and before we drove back home bought corned beef and pastrami sandwiches from Katz's .The sandwiches were loaded with meat and we decided to take a break in Middletown at a Shoprite for additional rye bread .A pending snow storm began while we were in the store and we drove home slowly in white out conditions .The 2 1/2 hr trip from NYC took an additional 3 to4 hrs .We enjoyed the sandwiches that night :) Anyway bring a cooler if you go to Johns.

Thank you for the suggestion .I'll give them a try. One of my favorites is John's Farms in Plainview the fish concession is private and the freshness ,selection and pricing in my opinion good .But I live in Moriches now .

Catch of the Day - your favorite seafood dish
Roasted Striped Bass , Calamari ,Israeli Couscous ,capers and mixed olives .I like to drizzle E.V.O. before and aft .Steamed Cauliflower with lemon on it all . I just had this a little while ago. I also Like mixed seafood in a fra diavalo any firm fish (not salmon though ) Calamari ,Scungilli (whelk) shell fish ,fresh or dried fennel ,with Large Shell pasta not anything long like Linguine ,Fettuccine, Spaghetti etc. Fresh Trout ,bacon and eggs with taters and strong coffee right from the campfire or stove .
Stuffing chicken breasts- pound or pocket?
I like firming them in the freezer then slicing thin pieces works fine for us .I at times just press the slices in crumbs and bake at a high temp .Spice's and herbs in the crumbs and sauce's and citrus near the end of cooking as well as possibly cheese .

What is the oldest family recipe you still use?
More then likely from necessity . My Sicilian grandmother made dishes for herself (which I would eat ) that reminded her of her childhood when things were lean .One was Stignoli which was chicken innards wrapped around parsley and Capozzelli always lamb and common in my neighborhood especially during Easter.There were many more but one that stands out is her potato and egg soup,peeled boiled potato,with garlic and plenty of parsley added .At the finish eggs were poached in the "brodo" salt pepper and a generous addition of good olive oil .Served with day old bread preferably a "Lasteda "a crusty seeded dark crusted round bread (that wasn't for making sandwiches ) I eat it now with the same amount of appreciation .

I rub oil then season so that the spices and herbs adhere and not wash away
Trying to make Rao's marinara sauce, close but seem to be missing something.
I was taught by my grandmother to use a couple of sticks of celery to absorb the acid . I still do it works fine.

I use both a premixed blend of of a dried product as well as raw veggies .I throw in frozen berries and fruit ,oatmeal ,organic peanut butter or a mixture of nuts.If i need a liquid almond milk does the trick .
Ramps on LI?
A little too steep for me . With the exception of the sea shore there are not many folks who look for wild foods .Upstate in Delaware County people would go out looking for ramps,horseradish,mushrooms etc as well as herbs for both food and medicinal .I'll be looking for ramps and Hen o'the Woods mushrooms.
