Go-to cookbooks for "must impress" dinner parties

Well, all you need to note is that 3x recipe fit in y dish, so if you need to make 5x recipe, you need to look elsewhere. And with a few of these notes, you can look for an appropriately sized dish. Or invite fewer people.

Uses for hot pepper chutney?

Can you freeze it in small containers? I understand the problems of preserving an abundant harvest. There are canning possibilities, especially with a pressure canner, but you could test a small container or 2 in the freezer before you go whole hog.

That wasn't exactly the sentiment at the time, but my friends have stood up to the test of time, and with clean hands. It was an interesting experience, well worth trying.

Back in the last century when Paula Wolfert's first Moroccan cookbook came out, I went through a difficult period when I expected people to eat dinner with their fingers. Honestly, it's a miracle that anyone will come to dinner now, but it was a great leveling experience. IMO, obviously.

Send the book back tout suite. Include a scathing note and let Amazon(?) know. It's really easy to see if an entire section is missing. Individual pages, not so much.

One thing you might want to do, if you don't already, is to keep track of what you serve and to whom, and any other information that might be useful.

Using a dry chili powder for salsa??

There are a lot of possibilities with salsa. Some are raw, fresh and crunchy, and others are cooked and smooth. Mostly, it's an experience with what's on hand. And jalapeƱos aren't what you might expect.

And Jody Adams' In the Hands of a Chef. The fall/winter assembly of potatoes, celeriac, fennel, squash... is terrific. But I don't know if that's too US. Did you get a peek at your host's cookbooks?

Is there a presentation issue as well? Given your thrift store karma, this shouldn't be a problem.

hazelnut flour

Bob's Red Mill makes it, and it's available on Amazon. My Wegmans sells it too, so if there's a Wegmans accessible to you, you can check online to see if they carry it.

Try cooling s couple of jars? Take notes and let us know. FWIW, I don't think Official Canning Jars are very susceptible to thermal shock.

Only one? Lucky! My apartment looks like the Collier brothers lived here, except it's cookbooks rather than newspapers. Moderation is not a term I'm familiar with.

how to store dough

If you need to store dough in the fridge for a while, you need to reduce the yeast called for. I've used as little as a quarter teaspoon for 8 or so cups of flour with good results.

I have two kitchens, 400 miles apart. As an older person, I love the fact that I don't have to carry a pile of books between kitchens or remember to bring a copy of a recipe when I move between them. Sometimes I find something at either end to refresh my online database.
