It's really terrific that you want to give your gf the world in an oyster. Honestly. But aren't you lumbering her with a bunch of stuff she can't use easily? If this is a real long-term relationship, both of you should be deciding what's needed over many years and situations.

Saving my rhubarb

I don't know the extent of your dandelion problem, but if individual treatment is an option, a hit of white vinegar (about 1/3 cup per plant) will take care of them. Also melts thistles.

Maybe you need to disembowel the jalapeños first? I made Niloufer King's Parsiburgers with two seeded jalapeños, and it was perfect for my spice-sensitive sister-in-law. A later batch using jalapeños from the same batch, but whole, was much hotter.

Trader joe's fresh rice noodles question

Well, I don't know. I've bought them twice, looking for rice noodle nirvana, and it wasn't there. (I'm in a fresh rice noodle desert in central New York.) A bit of contact with hot water seemed more than sufficient, but the list of preservatives suggested the noodles would never be what they wanted them to be.

Yes there is, and it is. But if purchased very fresh and perhaps given a squeeze of lemon before cooking, it is delicious and works well with other strong flavors such as mustard and cilantro. The OP tolerates salmon which many in my immediate vicinity well west of Boston don't, and I wouldn't think of cooking bluefish for them, in part because it wouldn't be fresh enough.
BTW, the salmon with anchovies and capers in a recent NYTimes is yummy.
