I don't consider a 4 1/2 hr trip "a bit of time" from central New York. Please remember that your audience is a lot larger than the metropolitan NY area. I shop local markets as well as the farmers' markets in my area, and get many wonderful comestibles, but not the wealth available to you. Some of us in the provinces must make do with our local markets and Internet ordering.

ETA Thinking a bit more coolly, this thread should be either in Manhattan or Outer Boroughs. Although TJs is a chain, that's not relevant to the original question. TJs is more fusion than real ethnic. Can I stop dragging my knuckles now?

The gluten provides structure for the loaf. If there isn't enough of it or if the strands are cut by whole wheat bran, it can't hold its shape when rising.

Red Pepper Jelly thickening

1 envelope of gelatin will set 2 c. of liquid firmly and 3 c. softly.

David Lebovitz has good directions for using gelatin, but I haven't been able to paste in the link.

Personally, I would wash and resterilize the jars.

Red Pepper Jelly thickening

After you soften the gelatin in cold water, heat the jelly enough to melt the gelatin, and stir in the softened gelatin. Be sure the gelatin is completely melted before you remove the pan from the heat or you can get gelatin lumps or worms, not attractive.

What to do with fresh hot cherry peppers?

I think the Wiki entry is confused. Cherry peppers (the first picture is correct) are perhaps an inch in diameter and are quite hot. Olives are not stuffed with them.

How I Wrote an Entire Book on Banh Mi

I've been making the Hanoi grilled chicken since the recipe appeared in the Wall Street Journal in June. I don't include the sugar, but add a bit of lime zest, and it's always been delicious. Tonight I made it with Viet fish sauce, and Andrea, you were right. What a difference it made. Thanks.

Wash them, stick them in plastic bags and freeze them. When thawed, the peel slips right off and the flesh is a purée.

I haven't tried the Flourless cookbook yet, and the flavor flours one isn't coming out until November, but I think these are along the lines you're looking for. You still might need to buy several unusual flours, but no weird chemicals.

If you succeed this year, I think you'll have another opportunity to succeed next year.

Are there any local bakeries who could donate single sheets of brownies or small (by their scale) amounts of other goodies? Alternatively, is there any rentable big kitchen space where a couple of people could crank out goodies? Next year...
