Voting thread: Cookbook of the Month January 2015

I don't think it's frozen. It's cooked and in the meat section. A little more cooking won't hurt it.

Christmas Dinner: in charge of turkey and ham and mashed potato -- but traveling 5 hours to get there, arriving just 2 hours before scheduled dinner time

This was suggested in another thread: http://chowhound.chow.com/topics/9973...

How are you cooking it?

Removing label stickers

A little oil applied over the labels and left to sit a bit should start softening the adhesive. Then a plastic scrubbee will deal with the mess.

Do you do anything more than freeze it in an ice cream maker? (A hint for the recipe, please)

Graduation dinner for Syracuse University

Where have you eaten in Syracuse, Chow-worthy or not?

Do guests' "do not eat lists" get you down?

Or vegans who finish their meals with big bowls of (real) ice cream.

What cookbooks have you bought lately or are you lusting after? October 2014 Edition. [old]

Seems reasonable.

Spelling errors on menus and websites

Past tenses of irregular verbs seem to be a particular Waterloo.

Why can't I get my bread to rise???

I have no idea. All I've ever baked with whole wheat has been the consistency of door stops.

Why can't I get my bread to rise???

The gluten provides structure for the loaf. If there isn't enough of it or if the strands are cut by whole wheat bran, it can't hold its shape when rising.

Red Pepper Jelly thickening

1 envelope of gelatin will set 2 c. of liquid firmly and 3 c. softly.

David Lebovitz has good directions for using gelatin, but I haven't been able to paste in the link.

Personally, I would wash and resterilize the jars.

Red Pepper Jelly thickening

After you soften the gelatin in cold water, heat the jelly enough to melt the gelatin, and stir in the softened gelatin. Be sure the gelatin is completely melted before you remove the pan from the heat or you can get gelatin lumps or worms, not attractive.

Thanksgiving and Christmas in the US

We're just getting started on the holiday festivities food-wise. Stay tuned. There's the green bean casserole contingent, the sweet potato and marshmallow casserole bunch, the canned cranberry sauce group and many more.

What to do with fresh hot cherry peppers?

I think the Wiki entry is confused. Cherry peppers (the first picture is correct) are perhaps an inch in diameter and are quite hot. Olives are not stuffed with them.

How I Wrote an Entire Book on Banh Mi

I've been making the Hanoi grilled chicken since the recipe appeared in the Wall Street Journal in June. I don't include the sugar, but add a bit of lime zest, and it's always been delicious. Tonight I made it with Viet fish sauce, and Andrea, you were right. What a difference it made. Thanks.
