Tater Salad: How Do You Take It?

Equal number of diced or sliced red potatoes and eggs. Covered with water and boiled together, about 8-10 minutes until potatoes are just cooked. Cool just a few minutes and then peel eggs (because I find them easier to peel when they are warm.) Salt, pepper, lately just chopped chives (because I happen to have them growing) a small dollop of mustard ( lately it's been whole grain, but I have used dijon and yellow) and a bigger dollop of mayo. Toss lightly to coat. Last batch also had fresh dill.
I also like I think it's Rachel Ray's loaded baked potato salad, which has you baking russett potatoes, cooling and dicing, adding cheddar and bacon and chives and sour cream and mayo. Whatever version I read also called for butter, which I have never added, and I substitute our homemade plain greek yogurt for the sour cream and only add a tiny bit of mayo.
And Emeril has one , called Flo's potato salad, that I love as well, also has bacon and smoked horseradish sauce and hot sauce, as well as mayo.
And I like the viniagrette and German ones too:)

How are meals served in your home?

We are a four generation family. My mom is with us part of the time, my daughter and son-in-law and grandchildren live upstairs in an apartment, and we mostly all eat dinner together. My son-in-law works many evenings, so he is often not home for dinner. Whoever is here eats at the dining room table, it is mostly one course protein, vegetables and sometimes starch. Sometimes the vegetable is salad, sometimes we have both salad and a vegetable. Everything is usually in some sort of serving dish,( unless it is a casserole, which I might serve from the pan it was cooked in) and the table is set for dinner. The kids ( ages almost 4 and 6) are somewhat picky eaters and often do not eat what we eat for supper (although we continue to try!). They might have pasta, or bread with cheese and fruit, or bread and pasta sauce( we load the pasta sauce with tons of vegetables) to dip it in, and their plates are often fixed in the kitchen. My husband, who is retired does almost all of the cooking during the week when I am working, and I usually cook on weekends. We have homemade pizza on Friday nights. That is actually served on round pizza pans, because I'm not sure how else you would serve pizza ( and it is a meal the kids will eat!) On Sundays, I usually do a complete Sunday dinner (roast something, potaotes and vegetables, usually a salad too, and we always have home made bread. On Sundays, I set the table with "good" dishes (which are actually Blue Willow stone ware) and we usually have a home made dessert. During the week, the kids usually have ice cream or a cookie or pudding after dinner, and they usually have it in the living room while watching tv or reading a story.

Please help I need advice about Steak Fajitas for a largish, pre- graduation, end of school year, party.

I've done fajitas with top round and they come out just fine. We usually marinate and then grill and slice it thin, as you said. Especially for a large group, I think the round will be fine. Also usually leaner and healthier:)

Pizza isn't all that bad, points wise. And if you have a salad with it, also fairly healthy. You just have to watch the "toppings" on the pizza. And thank you for starting this thread! It's been very inspiring and helpful to lots of us. I have been "off the wagon" for a couple of weeks, and will be working on jumping back on as well.

Tonight was homemade pizza, husband's whole wheat crust, also his sauce....and on the one for the kids. his homemade skinnytaste meatballs with spinach, sliced and topped with cheese, and on our pizza, ricotta, white clam sauce with lots of garlic, and topped with more cheese, including a bit of gruyere. With a glass (nope, 2) of Moscato. Yum.

What's for Dinner? #137 - Easter Edition [old]

Yesterday's dinner was :devilled eggs, bourbon and honey glazed ham,( and Cornell chicken, since my daughter doesn't eat ham) mashed potatoes, sweet potatoes, coleslaw, spinach, bread and butter pickles,my husband's home made whole wheat bread, glass of pinot noir, and Hershey's cocoa cake with cream cheese frosting, decorated with a sprinkled "bunny with a bow tie" ( 6-y-o granddaughter's request). Tonight's leftovers, put together by my sweet husband, while I was at work....chicken orzo soup, split pea and fresh pea soup with ham, and ham sandwiches on his home made whole wheat bread.

Really Dumb Food...!

Thanks mariacarmen. I haven't given up yet, and I will keep trying. We are thinking about a weekend in Boston, where I absolutely love the North End, and no way I will count points there! But we will do a lot of walking, so the damage shouldn't be that bad.
I also joined a gym (Planet fitness) that is in the perfect location for me...right on the way home from work....but it doesn't open till May. So still doing my morning 15-30 minute Walk at Home DVD's and progress has been slow and erratic. But I know I will get to my goal....someday. It really is a process.

Tonight, spaghetti squash, skinnytaste meatballs and sauce. good old standby, which everyone eats!
Last night, grilled boneless skinless chicken breast, skinntyaste's coconut brown rice ( very good!) and brusells sprouts.
Feeling a little discouraged and disheartened, and thinking about taking a ( very short ) break from the plan. Maybe a weekend getaway, and then right back to it:)

I actually don't have such a recipe...we buy either Marie's or Marzetti light. My husband tried making it with fat free Greek yogurt, but not successfully.

Thanks! I will ask him for the recipe and post it tomorrow or the next day, and no, it doesn't involve a bread machine, although he does use our KA stand mixer to knead. You could do it by hand, though.

I was up .6 today...I don't know why....weigh in lady said maybe I need to eat more of my activity points, so I'll try that next week.
Sometimes it can be so discouraging.....but
I am eating better than I ever have in my life, and am eating more mindfully, and even on my "worst" Weight Watcher's week, still doing better than I have most of my adult life.
It is a process, and I will get to my goals, eventually:)
Tonight was very lean (trimmed by my husband) sirloin steaks on the grill. Twice baked potatoes, stuffed with broccoli and topped with WW mexican cheese. Green salad, with reduced fat bleu cheese dressing. A glass of Shiraz.

Tonight we had home made pizzas again...Friday night pizza night:) My husband's homemade whole wheat crust, rolled very thin, topped with his loaded with veggies marinara sauce, sliced skinnytaste meatballs, one link of sweet italian flavored chicken sausage, roasted red pepper slices, calamata olives, garlic, sliced red onion, and fat free feta. 5 points a slice and YUM! The other pizza, mostly for the kids, was topped with the marinara sauce, some reduced fat shredded mixed Italian and Mexican (because we ran out of the Italian) cheeses, and we sliced up some skinnytaste meatballs on part of it. We have two pizza stones, so heat them in the oven for like 40 minutes while we prepped the pizzas. We also recently bought a pizza peel, which we sprinkle lightly with cornmeal, and then carefully slide the pizza onto the peel, and transfer it to the preheated stone in the oven. Bake for 10 minutes, and let sit for 5. Easy and delicious and pretty low in points.

I add mustard to egg salad, so that I don't miss the yellow. I usually make mine with 1 whole egg, and 2 extra whites (my dog eats the yolks) I recently also tried subbing fat free greek yogurt for the mayo, and liked the flavor a lot. I am not a huge mayo fan anyway, but I did used to use a little in egg or tuna salad, and in potato salad in the summer. The yogurt might not be for you if you really like mayo, but it works for me. Glad your exceptionally high protein breakfast worked for you.....
I also find that adding protein in the morning helps me to stay more satisfied, and I almost never eat anything between breakfast and lunch. I usually have a smoothie, made with 1/2 cup of the fat free Greek yogurt, about 1/2=3/4 cup frozen mixed berries, a banana, and about 1/2 cup of unsweetened, vanilla flavored almond milk. Sometimes (but not really often, maybe once or twice a week) I will also have 1/2 cup steel cut oats, with 1 choppped apple, a sprinkle of cinnamon, and about 1/2 cup of almond milk.

I did some googling about this, because I do remember hearing about this product a long time ago. I found an old (2000) Cooking Light Message board thread that mentioned it...Sunsweet Lighter Bake, I think it was called. don't know if it's still around, but also a lot of posters on that thread mentioned using baby food pureed prunes instead, and there are a couple of directions/recipes for making your own prune puree. Also saw some mentions of pumpkin pureee as a sub for fat. Interesting, and I may try some of it this weekend.

I miss baking too! I have found that most of the lightened up baking recipes I've tried are not very satisfying. Sometimes, I just bake something I want to make. Check out skinnytaste...she does have some low fat chocolate chip cookies. I haven't tried them, but I have made lots of her other recipes with good results.

Jeserf, your measurements are a very impressive accomplishment! Yay! So happy for you that your husband is home!
It is depressing that the weight doesn't seem to be related to increased activity (but surely your overall fitness is related to being more active!) and is only about what we eat, but you are doing so well, you will achieve ALL of your goals.

Where have all the Weight Watchers gone? Tonight was our "dance" night ( which I wish meant a pleasant musical exercise for me, but actually means just taking my grand daughter to her tap, ballet and gymnastics class, with her cousin, and then my sister-in-law and I take the two girls to McDonald's for supper after. Happy Meal with a cheeseburger, fries, and fat free chocolate milk= 12 points. And it isn't even that good. But, as I've said before...watching two six year old girls playing dragons and princesses at the Playland is worth it. These days will be gone too soon, I know:)
Anyway, since it's midweek, I haven't done much (any) cooking since Sunday. Last night my husband made Skinnytaste's chicken rollatini, which was delicious and only 5 points per serving, I had mine with his marinara sauce, which he loads with vegetables (celery, carrots, onions, garlic and spinach) over spaghetti squash, and salad on the side. Took some for lunch at work today too.
Feeling a little tired of staying on plan, but I know it's worth it. May be time for a treat, though. I've been carefully avoiding any desserts except for fat free greek yogurt, sugar free jello and fruit. i saw a recipe for chocolate banana mug cakes today, that sounded worth trying. Possibly this weekend. I'll post details if I make them.
