Bove's, did they pay off the food network to come there?
I'm afraid I'll have to be a dissenting voice here.
I love Bove's with an abiding passion. The sauces are outstanding we've never had a bad meal there. Yes - it's Northern New England "Italian". Yes, an actual Italian person would burst into flames if he ever walked through the door. No, there is no pretense of authenticity or sophistication. Nevertheless, my family and I make a special trip to Burlington twice a year (a three-hour drive) and stay overnight, for the express purpose of having dinner at Bove's.
Love is a strange and powerful force.

Slightly off-topic, but Manchester has a very good selection of ethnic grocery stores (certainly by NH standards!): Saigon Market, Spice Center, Bartlett St. Superette, and the new place that used to be Cheapo Depot on Mammoth Rd. spring to mind.

Indian: Uttapam question
I've been looking up recipes for uttapam online and it doesn't look too complicated- only very time consuming. After I've made the batter and let it ferment for 12-15 hours or so, is it possible to save or freeze the batter for later use? I'd love to make some uttapam for a quick dinner some weeknight - just can't wait 20 hours to do it.
Substitute for Indian Relish?
According to the ingredient list on the label:
Diced Tomatoes, onions, canola oil, brown sugar, distilled vinegar, garlic, curry powder, tammarind, salt, onion seds, cayenne pepper, grated ginger, mustard seeds, turmeric.
Substitute for Indian Relish?
Once a month, we drive to Massachusetts for a Trader Joes run. I just got back and I'm crushed - they've discontinued their Indian Relish. This is a major ingredient in four or five of my family's favorite recipes.
Does anyone know of a non-storebrand equivilent or substitute?
Resources for Formal Dining [Moved from General Topics board]
I teach 8th grade to a very sheltered, whitebread group of students in New Hampshire. My advisory group is centered around food. For our group project for the year, my kids would like to throw a dinner party for their parents with at least six courses, pairs of kids prepairing and explaining each course.
Is there an adolescent-friendly resource for teaching them about the roles of each course and how they should tie together? Also, I'd like to teach them about formal table-settings and etiquette. Any suggestions or resources for that?
What should young teenagers know about formal or semi-formal dining?

Rose Ice Cream?
On a whim, I bought a bottle of rose syrup at a Pakistani grocery store yesterday and inspired by Mercedes at Desert Candy (http://desertcandy.blogspot.com/), I thought I'd make some rose ice cream.
In the back of my mind, I thought about taking a maple recipe and just swapping out the two syrups, but most of the recipes I found called for a lot of egg yolks, which seems too heavy for the rose flavor and fairly long cooking, which seems like it would cook out all the rose esters.
My thought now is to take a basic sweet cream recipe and substitute 3/4 of a cup of the sugar with the rose syrup after the boil and add some corn starch to the custard to compensate for the extra moisture.
Any thoughts?

Tourist Food With Adolescents
We will be taking 70 8th grade students to Manhattan for their class trip in two weeks. It turns out that we need to find food for them at 10-11 PM on a Monday night after visiting Rockerfeller Center. We had discussed taking them to Bamn!, but the Village is a bit far. Any suggestions for a group of very sheltered 14 year-olds from New Hampshire to eat at that time of night that isn't too far a drive with grumpy bus drivers?
