What's for Dinner #124 [old]

Fried chicken marinated overnight in buttermilk, s/p. cayenne pepper, thyme, and crushed garlic. A dredge it in seasoned flour and let the skin get brown and crispy in cast iron skillet then move it to the oven to finish cooking. Of course we're having chicken gravy that's I'm browning it in the skillet first so I have the brown crispy bits for gravy, mashed potatoes, biscuits, and some sauteed kale- hey gotta have something green don't I?

I agree with this statement. If you are going to Daytona expecting transcendent food experiences like NY, SF, Boston, or Chicago, you are going to be disappointed. There's a lot of chains in Daytona. If you go expecting good/decent non chain food and take the time to root it out at fish shacks and holes in the wall then you can be satisfied. Basically it is what it is. People go to Daytona for things other than food experience. And just because this is my opinion doesn't mean that it is the absolute authority and no one else's opinions and recommendations are wrong.

I have family in Daytona and when I visit, I love to go t Down the Hatch at Ponce Inlet. I also like Betty's Cafe on AIA in Ormond, also Peach Valley Cafe in Ormond is great for breakfast.

Thanks- really have had this stuff since Thanksgiving and am on my third round of antibiotics. I shudder to think how bad I would be if I didn't get flu shot and pneumonia shot.

AFter being sick for two weeks with some kind of bronchitis almost pneumonia thing and not taking any time off from work to be sick because of year end closing, this is my first weekend in two weeks that I am cooking. Making the hubby a beef stew to put in his thermos because he is working snow removal this weekend, potato soup for me, and a taco soup to warm up for supper for next week. ALso making a big pan of brownies because I am craving chocolate.

Plain ole brown gravy- I drain off the excess drippings, bring the pan up heat again, pour in some beef stock (or bouillion cubes with water if no stock) to deglaze the pan. Couple of splashes of Worcestershire sauce or rinse out the A1 bottle, throw in some sliced onions, salt and pepper to taste. Put the meat back into the pan with the gravy and put into the oven for about an hour or so. The pan juices reduce to a thick gravy in the oven.

Spent yesterday cooking to feed a neighbor's family after a funeral yesterday. Made a huge chicken casserole, a meatloaf, a pot of green beans and taters, broccoli casserole, and strawberry pretzel salad.

Today is traditional New Years- country ham, fried taters, fried cabbage, black-eyed peas, and cornbread.

I got the 6 qt Professional 600 in November. I knew I wanted to do bread in it and I wanted to have the capacity for that. I recommend getting an extra bowl- I did and it was really handy during the holidays.

Grease remover ...

Just make sure it doesn't dry on any painted surface. I found out the hard way this summer. I had to repaint my window trim after I let it dry on it. It's also good to put into the washer to wash really greasy work clothes.

I like Totally Awesome for light jobs. I also like Mean Green. For really heavy duty grease removal get Blue Wolf. We use it at work to clean coal dust and grease from equipment. Hubby uses it on the farm to remove hydraulic grease and gear grease from equipment. I use it on my grill and to clean the oven with. Also use it to clean vinyl siding in the spring. Good for putting in steam carpet cleaners too.

Spaghetti with meat sauce for tonight then leftovers for the rest of the week. Today is my day to scrub the kitchen from top to bottom, clean and reorganize the cupboards, and clean the oven. I usually do this on New Year's Eve, but since I am off from work today, I figured what the heck. Hubby has already left the house this morning as he sensed this was my day to Lysol and bleach anything that didn't move. LOL

Amen LaLa. I grew up on a farm and live on a farm- A BEEF CATTLE OPERATION. A lot of what she does, I do too. I can relate to her life except for the four kids. I have never lived in a city, but just because I haven't, I certainly don't think that others can't have experiences that I may never have.

When you own what they own (over 10,000 acres I think) you can be what you want to be.

Not So Rookie Mistake

I misread a recipe too. It called for one bag hash brown potatoes, but the recipe listed it on ounces. I read it as two bags. I called it my five pounds of potoates casserole.
