I would like to make home-made danish pastry - the one that has some jam in the centre (like you see at Tim Horton's) . I like to use a bread machine for the dough - but I have a KA mixer with a dough hook also. Can any one help me? Thanking you in advance....

How about a Baked Alaska - if she doesn't like chocolate (can't believe someone doesn't like chocolate - LOL) - use a white cake base - raspberry filing over the cake - and raspberry swirl ice cream - put the marangue on - put it in the freezer - and after it is baked (you can do this when you get home) - and put a raspberry sauce. I think she could be impressed.
Mac and Cheese Recipe Needed?
I use this old method that my mother used....boil the pasta (i personally like scoobi-doo) - make a loose cheese sauce - I make a light white sauce and add some old cheedar cheese...then I add 1 can of chopped tomatoes....I also like a bit of Mrs. Dash and some fresh ground pepper....some home-made bread crumbs on top - then put in oven until the bread crumbs are toasted.....a tried and true in my house.

Smoking a turkey
Thank you so much to all who replied to my question. I think we will forgo the brining. We have to thaw the bird at home - and take the smoker and turkey with us to an other location for the smoking. It is a 16 pound turkey - and I just took it out of the freezer this morning (Tuesday) - I feel it will be thawed out by Friday for transporting in a cooler - and smoking on Saturday.

Thanks so much to all of you who answered....I do think I will not purchase the pork loin for this purpose....another store has the pork shoulder on sale but not quite as inexpensive as the pork loin...so for doing the pulled pork next weekend - it will be the shoulder.....

Thank you "goodhealthgourmet & todao" for coming back to me....I used the following recipe - using the bread machine to mix the dough. I then put it into a lightly greaded bowl over night - and baked them in the morning....not happy with the taste of these. I just noticed a recipe on the internet that has the stiffly beaten egg white - and I think I should try this. I also did a deep fried one last week - oil at 375...don't think I cooked them long enough as the middle was not completely cooked but they were getting very brown on the outside.....
BAKED APPLE FRITTERS
1/4 cup warm water
3/4 cup milk, scalded
1/4 cup margarine
1 egg
3 1/2 cups (about) flour
1/4 cup granulated sugar
1/2 teaspoon salt
1 tsp. nutmeg
2 teaspoons cinnamon
3 tsp. dry yeast
2 cups peeled, chopped apples
Glaze:
1 cup powdered sugar
2 tablespoons hot water
Preparation
Combine hot milk, margarine, sugar and salt in a large mixer bowl; let stand until margarine melts. Beat in 1 cup flour. Add yeast mixture, cinnamon and egg, beating until combined. If using a heavy-duty mixer, beat in remaining flour to make a sticky dough. If using a hand mixer, stir in remaining flour with a spoon.
Turn dough onto a floured board and knead 5 to 10 minutes, until soft and elastic, adding additional flour if necessary. Place dough in a greased bowl and turn to grease top. Cover and let rise about 1 1/2 hours, until doubled in bulk; or cover and let rise overnight in the refrigerator. Bring dough to room temperature before continuing.
Punch down dough and divide into thirds. Shape one-third of dough into a flat disc. Chop roughly with a sharp knife. Toss with one-third of the apples. Arrange apples and dough in six mounds on a greased baking sheet. Repeat with remaining dough and apples. Cover and let rise at room temperature until doubled in bulk, about 1 hour.
Uncover and bake at 350 degrees F for about 15 minutes, or until golden. While still warm, drizzle with glaze made by stirring together powdered sugar and water. When cool, store in plastic bags.

Have you ever made you own buttermilk? I purchase buttermilk for 1 recipe ( they only have it by the 1 liter container) - and the rest of it just sits in the frig - until it has passed its expiry date - and then it goes down the drain....its too pricey to do that.....If you have done your own buttermilk for a recipe - was it as good as the store bought stuff? Thanks for any replies...

Baked donuts?
I agree with you about the oil smell lingering in the house - so I purchased one of the oven donut pans - but did not like the results of the donuts. They tasted more like cake than a good donut....when I have the donut urge - I do them in the deep fryer with the range hood fan on - and the deep fryer directly under it.
How to properly glaze short ribs?
Are you in the U.S? I am in Canada - and perhaps your short ribs are what we call back ribs - am I correct here? I have a terrific recipe I use for back ribs ...I cut them up and boil them first - some don't like his method - but it works best for me. I bring them to a boil & then simmer them for about 1 hour, remove from water -put them on a rack in roasting pan, then I brush the glaze on - and put them in the oven - don't have a specific timing here - I just keep an ey on them -probably about 1/2 hour. They were a big hit at my last party. I can copy the glaze recipe if you like.

I clicked on the site you recommended - and then clicked on pies - the recipe that comes up says "Chocolate Pecan Pie" - I certainly agree with the posters here - no chocolate in pecan pie - I also don't want a pie that runs all over the plate - I like it firm enough not to be runny. I thank all of you that posted.
