Cream Cheese

I'm no longer happy with Philadelphia brand; I just know they've changed their recipe. The tang is gone which means it pretty much has no taste at all and fresh out of the (properly cooled) fridge, it's softer than it used to be (I am talking about the 8 oz. bar) and I've noticed there is a noticeable amount of liquid all around the base and I'm sure it didn't use to be there.

Reason for starting this discussion is I'm wondering if anyone has noticed the same things as me and if anyone has found another brand of cream cheese that they would recommend. I'm planning to make a NY cheesecake and I want the cheese to be wonderful on its own.

Confused about cutting boards

From what I've read, John Boos end cut boards are the best money can buy; and you'll need lots of money to buy one too. I'm going to throw out a suggestion: can you splurge for a real honest-to-goodness butcher block? The kind on big chunky legs like they used in the olden days? I had one before I had to downsize and absolutely loved it. I had a carpenter build a knife rack along one of the sides and it was oh so convenient. I think about how wonderful it was everytime I used my current bamboo board that is dinky in size just like my hateful dinky cooking "area." (It just doesn't qualify as a kitchen).

OMG!! Golden Corral

I have to laugh whenever I see their commercial on TV...trying to make us believe that cotton candy trumps a chocolate fountain.

The Most Obnoxious Chefs of 2011

Rocco DiSpirito...couldn't stand him on his first reality show. Was shocked that I found him appealing and engaging on his latest foray with his weekly dinner parties. I hope it's going to return.

The Most Obnoxious Chefs of 2011

I know nothing of Todd English's dark side (where do you people find this stuff?) but for some reason (and maybe now I know why) I've never cared for him. Who can understand anything he has to say? I call him mush mouth. I think he goes home & practices speaking without moving his lips in front of a giant mirror.

The Most Obnoxious Chefs of 2011

I just have to say...I love The Chew and try to watch it every day. Unlike some of the supposed situation comedies, I can be assured of at least one good belly laugh. It's refreshing to see Symon & Batalli not be afraid to act silly and normal and Clinton Kelly is perfect, perfect, perfect as the host. He also comes out with some hysterical comments. It took me longer to warm up to Karla. I love the show and hope it has a long run.

Top 10 Food-World Spats of 2011

China vs Food Safety: I knew about all these things and yet it made me ill to read them all in one succinct paragraph. Tell me again why we shouldn't be up in arms over Fluoride from China being dumped into our drinking water!

ocean spray cranberry juice -- watered down?

There's no doubt in my mind that my cranberry-raspberry juice is watered down considerably. It used to have a nice tang to it and now its like drinking colored water. I prefer to support local business but will move on to another brand.

Bulgur with Zucchini and Herbs

Where the heck are the scallops in this recipe? Aren't those beautifully caramelized scallops sitting atop the ever so tasty bulgur? Bulgur is my new most favorite grain; I can't get enough tabbouleh salad.

How do you drain grease from your stock pots or dutch ovens?

For me, the easiest way is to put the entire pot into the fridge overnight where any grease will solidify and can be easily removed with a spoon.
