try it like this as well

Cooking Fetta

seasoned Corn flour

Olive oil

rosemary

garlic

slice cooking fetta inot 1 inch slices

dust with corn flour twice i.e. dust once then allow to sit and dust again

slowly heat oilve oil in a heavy pan with peelked gatrlic glove and sprig of rosemary once garlic starts to sizzle remove along with rosemary from oil and place in a warmed shallow soup bowl (bowl/plate) and pan fry the cheese cook untill crispy and golden and turn and complete as such then remove from the pan and place in nowl with garlic etc and drizzle the cooking oil over serve with crusty bread it is realy good

These are cooked as individual portions and suit dinner starters if your doing informal as I tend to its one at a time and just as its ready to many in a pan and it loses its heat etc

Tequila Shrimp

this is good, I used to do a simliar way the tequilla goes really sweet I found and the lime hlps to cut that, I have done as above and served tossed with a salad of rocket (arugala?) and corriancer (cilantro?) and then warmed flour tortillas, gaucamole, a tomato slasa etc and made it inot like a make your own wraps lunch or for the diet lovers a wonderful prawn (shrimp) and tequilla salad with various condiments!!

Know Your Peppers

Good read I am a chilli fan fomr Australia and there are a number of growers with some of the rare breds here in Queenslkand o the sunshine coast I know of.

I have seen and tried many that you describe how ever dont forget the scotch bonneet and the birds eye (small little crazy hot asian numbers ) amongst others an ongoing feature of this kind would be really good as with most things there are many tyoes another good one would be galic maybe?

See my recipie in the mains secyion it is effectively a 24hr thing if you all ow to set etc and tke your time but can be done in 6-8 hrs as well they are spectacular and very available in Australia (maybe you need to move????)

Grilled Rib-Eyes with Chile-Lime-Tequila Butter

Personally I would allow the coals to tuen white have the rack about 4-6 inches off the coals and grill unitll they are firm with some small amount of give in the flesh when pressed allow to rest will be medium by then, I like thick rib eye on the bone when cooking on the BBQ over coal on a gas its really dependant on how well you kow your BBQ as simple as that.

The copound butter sounds good real good as for a slasa why not habenero chilli, fresh mango, red onion, corriander (cilantro) mint and a little sugar bound with tequilla, lime juice and light olive oil?

Dining in Cairns

Having spent alot of time in Cairns 20 years ago and having been back again recently I would have to agree that its not a destination for food how veer some of the larger hotels have really good eateries and along the marina there is some rather good spots and the food is fresh and pretty well priced.

The Esplanade is just a backpackers food hall catering to some better financed backpackers and some down the lower end I would steer clear even the barnacle Bills and some of the other places are just real tourist (international) traps check the marina places its pretty good and more top end.
