Umami in a Tube???
Um, tasting MSG is what umami is; MSG is monosodium glutamate; glutamate is an amino acid and a neurotransmitter; you have glutamate receptors on your tongue, and that's how you sense umami. You can get glutamate when proteins break down into their amino acid constituents, which would be the natural way of coming by umami flavoring, but at the molecular level it's not different than shaking on some Ac'cent or other packaged MSG. You just get more complexity with the naturally containing foods because purified MSG is just MSG.

Always had one in my town growing up in Jersey. Fond memories of ice cream birthday cake in June; ah...chocolate "ants" and gel-writing. Now that I'm in Iowa, no more Carvel, Dunkin' Donuts, or 7-11.
As for a place to hang out, my Carvel didn't have any seating (at the time, anyway; may have changed by now).
"Lite" coconut milk
One quick note regarding the end of the quote from TDQ's Thai cookbook: cholesterol only occurs in animals, so unless it's added during processing, nothing that comes from a plant has any cholesterol (regardless of the fat content). That would include nuts and coconuts.
